Taking Cuisine Out of this World: NASA and Worldchefs Announce New Partnership

Empowering young chefs to bring gastronomy to space exploration, Worldchefs and NASA’s Hunch program partner on the 2023 Astronaut Culinary Challenge.

Paris, 10 of November 2023 – NASA’s HUNCH program and Worldchefs have announced an exciting collaboration that gives new meaning to haute cuisine. Their partnership empowers young chefs to pioneer space-ready culinary innovations through the Astronaut Culinary Challenge.

As part of HUNCH’s culinary initiative, the Astronaut Culinary Challenge nurtures skill development and the creation of space-friendly cuisine for astronauts. Each year, culinary teams from over 30 schools craft innovative dishes based on a central theme, bringing gastronomy to space exploration.

The HUNCH program’s mission is to inspire students through project-based, student-centric STEM learning. Participants acquire 21st-century skills and gain career-launching experiences by designing and fabricating valuable products for NASA.

Students learn about space physiology, how nutritional needs change for a body in a microgravity environment, and what to consider when food processing for space flight. Competitors then develop an entree to satisfy the nutrition needs and provide a taste experience for astronauts, ensuring that their creations adhere to the exacting standards of the NASA Johnson Space Center Food Laboratory.

The 2023 Astronaut Culinary Challenge theme is a savory breakfast item that includes a vegetable, with set nutritional guidelines including calories, fats, sodium, and fiber to ensure that astronauts launch into their day with optimal nutrition.

A preliminary round of competition will be held the first week of March, 2024. Teams who advance in the preliminary round will be invited to NASA’s Johnson Space Center in Houston for the competition final in April, where their work will be judged by Food Laboratory personnel, industry professionals, the ISS program office, and astronauts for quality, taste, and their research presented in technical paper and video presentation. The winning entree will be processed by the Johnson Space Center Food Lab and sent to the International Space Station for astronauts to savor.

“We are very happy to announce our extraordinary partnership with NASA’s HUNCH program. Together, we can empower young chefs to take their culinary talents beyond our planet’s boundaries, pioneering innovative, space-ready cuisine,” says Thomas A. Gugler, President of Worldchefs. “This partnership is a testament to our commitment to raising industry standards and inspiring the next generation of chefs to build skills for the future. One small step for chefs, one giant leap for gastronomy!”

Winners of the Astronaut Culinary Challenge will be honored at Worldchefs Congress and Expo 2024 in Singapore.

The event marked a heartwarming celebration of each student’s success in finishing the life-altering culinary training program.

Supported by Feed the Planet partners, Worldchefs and the Electrolux Food Foundation, and in collaboration with Svenska Kockars Förening, Sodexo, Stockholms Stad, and Arbetsförmedlingen, the Like a Chef employment training program in Stockholm has successfully trained and empowered new generation of kitchen professionals.

The curriculum teaches chefs how to think and act sustainably, with modules on the Big Picture, Agriculture, Animal Husbandry, Seafood, Energy, Water, Waste Management, and Sustainable Nutrition. Upon completion of the course, participants are equipped with the theory required to complete an online assessment, and receive a Worldchefs certificate and digital credential in the form of a digital badge – an important way to make skills visible when seeking employment in professional kitchens or demonstrating commitment to the sustainability movement.

“Whether you are learning the basics needed to start a career in culinary arts or expanding your knowledge on sustainability, Worldchefs Academy provides important tools for career development,” says Ragnar Fridriksson, Worldchefs Managing Director. “Beyond skills, the Sustainability Education for Culinary Professionals course empowers chefs to take action for people and planet, helping chefs to harness ‘the power of the white jacket’ and take on their responsibility to share healthy and sustainable habits with the many people they feed.”

Ingrid Mellstig, Head of Electrolux Food Foundation, says “we can all learn to make informed decisions about what to cook and eat. It is extra cool when knowledgable chefs lead the way to sustainable food habits. As a Feed the Planet partner, we are very proud of this initiative.”

Worldchefs Academy launched the flagship Pre-Commis Chef Training Program and mobile app in 2018 with the support of Nestlé Professional and the Pro Gastronomia Foundation. Offering culinary education for aspiring chefs that may not have the means, mobility, or flexibility to attend full-time culinary school, the Pre-Commis Chef course is designed to prepare students for their first job in professional kitchen. The program also links to Worldchefs Global Culinary Certification opportunities and is intended to be the first step on the culinary career pathway.

Learners can now access both the Pre-Commis Chef Training Program and Sustainability Education for Culinary Professionals through the Worldchefs Academy online portal: www.worldchefsacademy.com. Participants can learn through the web-based platform or via the mobile app offering an offline study mode. By connecting to the internet when it is available, they can download the course via the mobile app and study at any time, with or without internet access. Then they go back online when ready to complete the final assessment.

The Pre-Commis Chef Training Program is available in English, Spanish, Portuguese, Arabic, Italian, German, and Mandarin. The Sustainability Education for Culinary Professionals Course is available in English with additional languages to follow.

“For us at Worldchefs, it is important to give aspiring chefs the foundation for a proper learning system that is available to all,” says Worldchefs President Thomas Gugler. “On behalf of the Worldchefs Board of Directors, I would like to congratulate all the volunteers and our wondering sponsors who helped to bring this educational opportunity to chefs around the world. We are proud to provide the resources to help prepare our industry for a better future,” says Worldchefs President Thomas Gugler.

The Worldchefs Academy mobile app can be downloaded on both the App Store and Google Play, and at www.worldchefsacademy.com.

Paris, 29 of June 2022 – Forever Oceans, a leading innovator in sustainable aquaculture, has signed a new partnership with Worldchefs as an Official Partner and Trusted Brand. The US-headquartered company raises sustainable seafood through advanced technologies, with a research and technology facility in Hawaii, and operations in Brazil, Panama, and Indonesia.

Named to the Top 25 Seafood Innovators list in September 2021 by Seafood Source, Forever Oceans fish are reared in deep-ocean automated enclosures using a patented single-point mooring system that naturally orients each enclosure within the ocean current to optimize fish and environmental health. Combining biology, aquaculture, and technology, the Forever Oceans approach incorporates artificial intelligence and robotics to constantly monitor water quality and fish health to limit human interaction and reduce environmental risks.

Forever Oceans is committed to conservation and the support of local economies. Working with the local fishing community to source broodstock, Forever Oceans only ocean-raises fish endemic to the areas where they operate. In January 2022, Forever Oceans struck a landmark agreement with Brazil, representing the largest offshore concession ever given for sustainable marine aquaculture. Totaling 64,200 hectares, the development is expected to generate over 500 jobs over the next eight years, and “set the country on the path to the development of sustainable marine aquaculture,” said Brazil’s Secretary of Aquaculture and Fisheries Jorge Seif Júnior.

Forever Oceans™ Kanpachi is a highly versatile finfish with a unique, buttery flavor. The fish is a natural protein and an excellent source of Omega 3s.
