Since assuming the role of Continental Director for Worldchefs Asia in June 2022, my foremost objective has been to establish communication for our 21 Asia Chefs Associations in response to the challenges posed by the pandemic.
Simultaneously, I have dedicated myself to promoting Asian culture and cuisine by harnessing our collective expertise, safeguarding our culinary heritage, and introducing our 21 Asia Chefs Associations.

In pursuit of these goals, I have appointed Chef PV Soon from Malaysia to spearhead our e-book projects. It is with great honor that I announce our inaugural “Food of Asia – Soul of Asia” e-book has been bestowed with the esteemed Best in the World Gourmand Cook Award.

I express my heartfelt appreciation to Chef PV Soon and his team, as well as to all the Asian Chefs Associations that contributed their information and expertise, for their invaluable contributions to this remarkable achievement. Cocktail Cardamom Leaves and Apple

See Koppert Cress’ recipe for Cocktail Cardamom Leaves and Apple:

INGREDIENTS

For the Cardamom Leaves concentrate juice: 

  • 10 Cardamom Leaves
  • 200 ml water

For the cocktail: 

  • 50 ml  concentrate of Cardamom leaves juice 
  • 250 ml Apple juice
  • 10 gr Cardamom sugar for the rim of the glass

EQUIPMENT

  • Blitzer

METHOD

  • Cut 10 Cardamom Leaves in pieces.
  • Put the Cardamom Leave pieces and the water in the blitzer.
  • Let it blitz for 2 minutes.
  • Separate the juice and the pulp with a sieve.
  • Pour the concentrate in a bottle.
  • Mix together 50 ml of Cardamom juice and the Apple juice.
  • Dip the rim of the cocktail glass in water and Cardamom Leaves Sugar.
  • Pour the mixture of apple juice and concentrate in the cocktail glass.
  • Slice 1 Cardamom Leave in half and place it in the glass.
  • Serve.

24th FHC China International Culinary Arts Competition

Since the first FHC China International Culinary Arts Competition, held in 1998, it has adhered to its original goal: giving students and chefs who love cooking a platform for networking and skills exchange. The competition hopes to cultivate young chefs, so as to promote and strengthen the development of Western food in China and integrate Chinese and Western culinary culture.

With the full guidance of the instructors, the event organizing committee and the recognition and attention of all sectors of society, the competition has risen from an intercontinental event to a top-tier international event. It is a great platform to showcase the talents of all chefs!

The FHC China International Culinary Arts Competition, endorsed by Worldchefs, consists of three major competitions: 2023 FHC China International Culinary Arts Competition, 2023 FHC China International Pastry and Bakery Competition, and 2023 FHC Shanghai International Culinary Championships. The competition took place from November 8th to 10th, 2023, finally resuming after two years due to the covid-19 pandemic.

Honorable guests delivered welcome speech on grand launch ceremony.

The competition was organized by Shanghai Cuisine Industry Association and Shanghai Sinoexpo Informa Markets International Exhibition Co., Ltd. and was endorsed by Worldchefs. The distinguished speakers at the event included: Chairman-Chen Zhe of the Shanghai Restaurant & Cuisine Association; USDA Deputy Undersecretary, Jason Hafemeister; Chairman of the Worldchefs Culinary Committee, Dr. Rick Stephen; and Chairman of FHC China International Culinary Arts Competition, Clinton Zhu.

Three-day intensive culinary competition

  • FHC China International Culinary Arts Competition: Display and Hot cooking with 60 sessions in total
  • Pastry and Bakery Competition: Display and Live with 32 sessions in total
  • 2023 FHC Shanghai International Culinary Championship: International team compete in 2 sets, each 6 hours of live cooking. The teams were from China, South Korea, Australia, and Italy.

The competition was judged by ten distinguished judges, all certified by Worldchefs.

The rules of the competition were as follows: teams of three chefs will cook for twelve people. Three portions will be for the jury to evaluate, one portion for the media, and eight portions for VIP guests of the show to dine at and experience a true international delight.

The results of the 2023 FHC China International Culinary Arts Competition are:

  • Winner – Italy
  • First Runner-up – South Korea
  • Second Runners-up – China and Australia

The culinary works of art featured at the competition were:

  • Chinese Cuisine and Western Cuisine Culinary Art Displays: Fruit and Vegetable Carving, Tapas/Finger Food, Western Three Course Menu
  • Chinese Cuisine and Western Cuisine Challenge: IS Seafood Halibut Western Main Course, Sumerians Truffle Chinese Main Course, LBF Australian Beef Western Course, U.S. Chicken Western Main Course, U.S. Potatoes Innovation Western Cuisine, U.S. Pork Western Cuisine Main Course, MINDONGYIYU Yellow Croaker Chinese Main Course, EWEN Arborio Rice Western Main Course, EWEN Pasta Western Main Course, NZ Maimoa Lamp Chinese Main Course, Chu Dao Cellophane Noodle Cuisine.
  • Pastry and Bakery Competition: Fondant Cake, Afternoon Tea, Buffet Showpiece.
  • Pastry and Bakery Live: Cake Decoration, Break Baking and Display, Plate Dessert, Chocolate Fondant Cake, Swiss Roll and Pound Cake, Soufflé.

The 27th FHC Shanghai Global Food Trade Show and the 25th FHC China International Culinary Arts Competition will be held from November 12th to 14th, 2024. We look forward to your participation!

INGREDIENTS

  • 200 grams soft unsalted butter
  • 2 table spoons Tahoon cress pulp (remaining of the tahoon cress oil process)

    METHOD

    • Soften the butter to “pommade” stage.
    • Add the Tahoon Cress pulp and mix well.
    • Let set and serve.

    CAP & COTHM’s grand culinary show steals the spotlight at 11th WEXNET Exhibition by TDAP

    Celebrity Chef Gulzar Wows Audiences, Live Cooking Competitions Thrill Spectators, and Diverse Exhibitors Impress at Three-Day Extravaganza

    Chefs Association of Pakistan (CAP) and College of Tourism & Hotel Management (COTHM) orchestrated a spectacular culinary show during the 11th WEXNET Exhibition, an event organized by the Trade Development Authority of Pakistan. From mesmerizing culinary demonstrations by Celebrity Chef Gulzar to thrilling live cooking competitions featuring COTHM’s culinary arts female students and home chefs, the event was a culinary masterpiece that left a lasting impression on all attendees.

    Celebrity Chef Gulzar Steals the Show

    A highlight of the event was the presence of Celebrity Chef Gulzar, specially invited from Karachi, who left the audience in awe with his culinary prowess. Chef Gulzar’s captivating culinary demonstrations showcased his expertise and creativity, leaving the audience with tantalizing flavors and valuable cooking tips.

    Live Cooking Competitions

    Culinary arts female students and skilled home chefs from the platforms of CAP and COTHM battled it out in live cooking competitions that added an element of excitement and competition to the event.     Chefs Association of Pakistan & COTHM host world’s largest chefs’ gathering

    Chefs Association of Pakistan (CAP), with the strategic partnership of College of Tourism & Hotel Management (COTHM), Chocolate Academy, and Diet Studio and the endorsement of Worldchefs celebrated International Chefs Day with unprecedented grandeur at Alhamra Hall 1, Mall Road, Lahore.

    This momentous occasion, graced by the presence of esteemed guests and a record-breaking gathering of over 2500 culinary professionals, showcased the culinary excellence and talent that Pakistan has to offer. The event not only promoted the culinary prowess of Pakistan but also took the bar high in the respect of the ‘white jacket’ in the world.

    The event was presented by Nestle Professional, powered by Young’s Food and Shangrila Foods, and executed in association with KnN’s and Ambassador Commercial Kitchen Equipment. Pakistan’s number-one fast food brand Cheezious joined the event as Industry Partner.

    The day commenced with a spectacular chefs parade, setting the stage for an unforgettable celebration of the culinary arts; Minister of State for Tourism, Wasi Shah, graced the occasion as the Chief Guest.

    CAP President Ahmad Shafiq delivered a warm welcome address, expressing his delight in hosting the talented chefs and urging them to join the ranks of CAP. He acknowledged the role of Worldchefs in bringing awareness among the masses about the chefs’ profession and uniting the chefs of the world under one umbrella. He also appreciated International Chefs Day 2023’s theme ‘Growing Great Chefs’ and said that the world needs to work on the training of young chefs and COTHM in Pakistan is already doing this service, considering it as an obligation. He also unveiled an exciting announcement – the Pakistan International Culinary Championship (PICC), scheduled for February 13, 14, 15, 2023, promising to be a prestigious culinary event of international repute.

    A highlight of the evening was the induction of CAP’s executive committee members, who took an oath from President Ahmad Shafiq and were presented with chef belts, signifying their commitment to the culinary craft.

    The crowning moment of the event was the Chefs Achievement Awards – Lahore, 2023, where outstanding professional chefs were honored with beautiful trophies in various categories. Chief Guest Wasi Shah, CAP President Ahmad Shafiq and CAP Senior Vice President Waqar Ilyas presented the awards to these deserving recipients, acknowledging their exceptional contributions to the culinary world.

    The festivities came to a sweet conclusion with a delightful cake-cutting ceremony, where a delectable cake, generously provided by Pakistan’s premium bakery brand Mini Treats, was shared among the attendees. Cheezious, Pakistan’s leading fast food brand, added to the excitement by distributing free vouchers to the professional chefs, ensuring that the culinary celebration continued even after the event.

    The International Chefs Day Celebrations and Chefs Achievement Awards (CAA) Lahore 2023 was a resounding success, epitomizing the passion and dedication of Pakistan’s culinary community. It was a day when gastronomy took center stage, and chefs were celebrated for their exceptional talents and contributions to the world of food.

    Algae Powder Bread

    See Koppert Cress’ recipe for Algae Powder Bread:

    INGREDIENTS

    • 13 gr fresh yeast
    • 500 gr strong bread flour
    • 10 gr fine sea salt
    • 350 gr warm water
    • 2 tbsp Algae Powder Aventurine
    • 1 tbsp Algae Powder Emerald

    EQUIPMENT

    • Dehydrator machine
    • Stand mixer
    • Basket
    • Oven

    METHOD

    • Measure all ingredients.
    • Mix the flour and Algae Powders.
    • Dissolve the yeast in the warm water.
    • Add the salt to the flour and Algae Powders.
    • Put the flour mixture in the bowl of the stand mixer.
    • Put the stand mixer down and turn on.
    • Slowly add the yeast with water to the bowl while the stand mixer mixes.
    • Mix for 5 minutes.
    • Place the dough on a plate.
    • Knead the dough well for 2 minutes. Pull the dough towards you and back, turn it and again.
    • Keep kneading to get air into the dough.
    • Sprinkle flour in a basket.
    • Make a ball of dough and make sure the bottom of the ball is closed.
    • Place the ball in the basket.
    • Let the dough rise for 90 minutes in a warm room.
    • Preheat the oven to 250 ℃.
    • Make a design on the top of the dough ball.
    • Bake the bread for 25 minutes at 225 ℃
    • Remove the bread from the oven after 25 minutes and let it cool.
    • Cut it into slices and serve.
