Worldchefs Academy Launches Free E-Learning Sustainability Education for Culinary Professionals Course

  • Worldchefs Academy (www.worldchefsacademy.com) has expanded their course offerings, adding Sustainability Education for Culinary Professionals to the line-up of free courses available for chefs around the world and at any stage of their career.
  • The e-learning version of Sustainability Education for Culinary Professionals was created by Worldchefs Feed the Planet initiative, powered by Electrolux Food Foundation and Custom Culinary, and includes eight lessons to help learners deepen their knowledge of sustainable culinary methods.
  • Graduates receive a Worldchefs certificate and digital credential in the form of a digital badge, an important way to make skills visible whenseeking employment in professional kitchens or demonstrating commitment to the sustainability movement.

Paris, 13 of July 2022 – Worldchefs Academy has expanded their course offerings, adding Sustainability Education for Culinary Professionals to the line-up of free courses available for chefs around the world and at any stage of their career. The online course includes eight lessons to help learners engage with key themes and deepen their knowledge of sustainable culinary methods.

The e-learning version of Sustainability Education for Culinary Professionals was created by Worldchefs Feed the Planet initiative, powered by Electrolux Food Foundation and Custom Culinary, with the support of content advisors of culinary educators and experts around the globe.

The curriculum teaches chefs how to think and act sustainably, with modules on the Big Picture, Agriculture, Animal Husbandry, Seafood, Energy, Water, Waste Management, and Sustainable Nutrition. Upon completion of the course, participants are equipped with the theory required to complete an online assessment, and receive a Worldchefs certificate and digital credential in the form of a digital badge – an important way to make skills visible when seeking employment in professional kitchens or demonstrating commitment to the sustainability movement.

Worldchefs Academy launched the flagship Pre-Commis Chef Training Program and mobile app in 2018 with the support of Nestlé Professional and the Pro Gastronomia Foundation. Offering culinary education for aspiring chefs that may not have the means, mobility, or flexibility to attend full-time culinary school, the Pre-Commis Chef course is designed to prepare students for their first job in professional kitchen. The program also links to Worldchefs Global Culinary Certification opportunities and is intended to be the first step on the culinary career pathway.

Learners can now access both the Pre-Commis Chef Training Program and Sustainability Education for Culinary Professionals through the Worldchefs Academy online portal: www.worldchefsacademy.com. Participants can learn through the web-based platform or via the mobile app offering an offline study mode. By connecting to the internet when it is available, they can download the course via the mobile app and study at any time, with or without internet access. Then they go back online when ready to complete the final assessment.

The Pre-Commis Chef Training Program is available in English, Spanish, Portuguese, Arabic, Italian, German, and Mandarin. The Sustainability Education for Culinary Professionals Course is available in English with additional languages to follow.

Competition Seminar instructors share techniques from both the perspective of Worldchefs Certified Judges and award-winning competitors. Participants gain an understanding of not only judging criteria but also best practices in the competition kitchen and tactics that consistently reach the highest place at the podium.

Current judges: All Worldchefs Certified Judges are required to attend a Competition Seminar every five years. 

Future judges: Attending a Competition Seminar is a mandatory part of the process to become a Worldchefs Certified Judge. Participants are awarded a certificate of participation that can be submitted as one of the required credentials in an application. Attending applicable Competition Seminars is one part of the process to become a judge, and does not automatically qualify you as a Certified Judge. Historical Committee Report of 2022

Dear Worldchefs Community,

I would like to share with you the Historical Committee Report of 2022.

The Worldchefs President Thomas Gugler appointed the Historical Committee in 2017. Since then the committee produced a document relating to the history of Worldchefs Member countries.

37 countries replied 500 copies were printed and distributed at the Congress in Kuala Lumpur in Malaysia in 2018.

In 2020 the Historical Committee was asked by the President to continue with this project and produce an updated report and present at the Worldchefs Congress in Abu Dhabi 2022.

A questionnaire was prepared by the committee and was circulated in June 2021 via the Continental Directors of each regions members. With two reminders from the President, direct contact from the Continental Directors from each region and personal intervention from the members of the Historical Committee we have secured 84 replies as of 24th April 2022.

We have to congratulate the Regions of Europe North,Europe Central and the Americas for a 100% response, of the 103 Worldchefs Member Countries 19 did not reply even after so many reminders.

France, Slovenia, Spain, Cambodia, China, Myanmar, Nepal, Pakistan, Philippines,Vietnam, Kenya, Kuwait, Morocco, Palestine, Fiji, Guam, New Zealand, Papua New Guinea and Vanuatu.

In the 2022 report we will include the information received for the 2018 publication and the updated list of the Worldchefs Honorary Life Members.

A Final report will be prepared with hopefully 100% replies and distributed at the Worldchefs Congress in Singapore 2024.

A little bit of history here as we will celebrate the 40th anniversary of the founding of the Singapore Chefs Association, the hosting of the 2nd Congress after the 1990 Congress which was the first time that Asia hosted this Global Culinary Event.

In closing, l would like to thank the members of the present committee Hazel, Michael, Kurt and Alan and past members Margaret and Norbert for their tireless commitment regarding this project.

Worldchefs Launches 7th Language Offering Pre-Commis Chefs Course in Mandarin!

Worldchefs Academy is excited to announce the launch of the Mandarin Pre-Commis Chef Course! Adding to the line-up of free courses available for our global community, the Mandarin Pre-Commis Chef Course joins the English, Spanish, Portuguese, Arabic, Italian and German Library!

Chief Instructor (Japanese Cuisine)

Major Duties:

  • To plan and support the development of new programmes in Japanese cuisine and to review and enhance the existing courses / programmes to match with the appropriate standards of local and international accreditation bodies;
  • To plan, organise and conduct classes and practical training in Japanese food preparation and compile training related records and statistics;
  • To oversee the operation of the training kitchens, coordinate special training events / functions and culinary competitions which form part of the Integrated Learning Experience of the training programmes;
  • To support the administration for programme affairs, time tabling systems and programme board documentation, student recruitment of training course / programmes;
  • To manage the day-to-day operations as well as staff and resources of the section and to assist in preparing financial estimates;
  • To foster close ties with employers and related professional associations both local and overseas, and to obtain feedback on the relevance of the training courses / programmes;
  • To oversee the procurement, maintenance and commissioning of plants and equipment of the section; and
  • To perform duties related to the effective running of training courses and the daily operations of Training Kitchens.

Requirements:

  • A recognised higher diploma in a relevant discipline, or equivalent;
  • At least 9 years’ work and / or teaching experience in the relevant industry, preferably in hotel and catering industry;
  • Proven supervisory and administrative experience;
  • Proficiency in written and spoken Japanese and preferably with knowledge in English and Cantonese;
  • Proficiency in basic computer software applications; and
  • Ability to pass a trade test.

Notes:

  • Candidates without the required academic qualification stated in the Requirement (a) but possessing 16 years’ work and / or teaching experience in the relevant industry may also apply. Where applicable, these candidates may be required to have a Qualifications Framework (QF) Level 3 qualification.
  • Candidates with a recognised degree in a relevant discipline or equivalent, and at least 3 years’ work and / or teaching experience in the relevant industry, preferably in hotel and catering industry, may also apply and will be considered for the Assistant Training Consultant rank.
  • The appointee may be required to perform duties outside normal office hours, work on shift over a full 7-day period and in designated places as assigned.
  • In support of the Sexual Conviction Record Check (SCRC) Scheme launched by the Hong Kong Police Force, all prospective appointees will be requested to undergo the SCRC at the advanced stage of the employment process.

Paris, 2 of May 2022 – Azerbaijan’s first professional culinary center, the Culinary Arts Center of Azerbaijan (CÀSÀ), has joined Worldchefs as a Education partner.   • Auburn University has been accepted as a Recognized School and is a part the landmark Recognition of Quality Culinary Education program officially recognizing educational institutions with a commitment to the highest standards in culinary education.
  • The Auburn University Culinary Science program is one of six educational programs in the United States offering Worldchefs Global Hospitality Certification to help students and alumni build a career pathway in culinary arts.

Paris, 28 of April 2022 – The Auburn University and their Culinary Science program, a study option in the Hospitality Management degree program in the College of Human Sciences, has joined Worldchefs as an Education Partner. The partnership unites Auburn University with an international network of hospitality educators leading the future of culinary education and training.

Accepted as a Worldchefs Recognized School, the Auburn Culinary Science option fulfills the criteria for the Recognition of Quality Culinary Education program. Launched in 2010, the landmark Recognition of Quality Culinary Education officially recognizes educational institutions committed to the highest standards in culinary education. Recognized Schools represent excellence in culinary education on a global scale. 

The Auburn Culinary Science option trains students in food production and service by emphasizing industry safety standards, culinary knowledge and hands-on experience, sustainability, foodservice management, and global cuisines. Traynor said the addition of the Tony and Libba Rane Culinary Science Center, opening fall 2022, will further establish Auburn University as a global leader in culinary education.

The Auburn University Culinary Science program is also one of six educational programs in the United States offering Worldchefs Global Hospitality Certification. Mark Traynor, associate professor and Culinary Science program coordinator at Auburn, said Worldchefs recognition coupled with Global Hospitality Certification will elevate Auburn’s program in the global market and connect students with international opportunities.

“This prestigious award acknowledges the past and current effort we have put into providing high-quality culinary education at Auburn University. Moreover, it recognizes the university’s commitment to excellence in culinary education moving forward,” Traynor said. “Now that our curriculum is certified by the World Association of Chefs Societies, our students can be assessed for professional certifications that recognize their individual skills. In addition, this certification provides a platform for our students to be internationally visible and connected with potential international employers.”
