Worldchefs Enhances Culinary Education in China at the 7th National CateringVocational Education Forum in Chongqing
Worldchefs proudly participated in the prestigious 7th National Catering Vocational Education Forum, held from April 23 to 25, 2024, in Chongqing, China. This event was part of the annual working meeting of the National Catering Vocational Education Teaching Steering Committee and the Catering Education Working Committee of theChina Culinary Association (CCA). The forum gathered over 200 experts, including more than 100 heads of vocational schools from across the country, industry leaders, and policymakers to discuss advancements and innovations in culinary education.
Worldchefs was represented Continental Director for Asia, Willment Leong, and Assistant Vice President, KK Yau, who shared insights into Worldchefs’ global educational programs and the impact of international certification standards on culinary training.

During the forum, Worldchefs highlighted its educational pillars – Competition, Feed the Planet, Networking, and Education – which are designed to support the holistic development of culinary education globally. These pillars have been instrumental in helping educational institutions around the world achieve excellence and recognition. The event also served as a platform for Worldchefs to present its international culinary education certification project, which helps culinary institutions meet international standards and enhances their global brand presence. The certification criteria focus on quality, sustainability, and innovation, aligning with the needs of the modern culinary industry.

Hotelex China Inheritance and Innovation Chinese Cuisine Challenge
The “Search” 2024 China Innovation and Tradition Culinary Challenge is jointly organized by Shanghai Sinoexpo Informa Markets International Exhibition Co.,Ltd. and Shanghai Restaurants Cuisine Association (SRCA) , endorsed by Worldchefs, and is supported by Yuanchang, Fusion, ECMA, CCA Elite Culinary Council and TCA.
Contestants’ skill will be recognized internationally and recognized by Worldchefs. The purpose of this competition is to promote traditional and innovative culinary skills. It tests the ability of contestants to combine traditional Chinese food with innovative Chinese food, further promotes the construction of high-skilled talents in the Chinese food and provides young chefs with showcase platform to promote better development of Chinese food.
The competition will be held at National Exhibition and Convention Center (Shanghai) from 27th March to 30th March, 2024. Since the first FHC China International Culinary Arts Competition, held in 1998, it has adhered to its original goal: giving students and chefs who love cooking a platform for networking and skills exchange. The competition hopes to cultivate young chefs, so as to promote and strengthen the development of Western food in China and integrate Chinese and Western culinary culture.
With the full guidance of the instructors, the event organizing committee and the recognition and attention of all sectors of society, the competition has risen from an intercontinental event to a top-tier international event. It is a great platform to showcase the talents of all chefs!
The FHC China International Culinary Arts Competition, endorsed by Worldchefs, consists of three major competitions: 2023 FHC China International Culinary Arts Competition, 2023 FHC China International Pastry and Bakery Competition, and 2023 FHC Shanghai International Culinary Championships. The competition took place from November 8th to 10th, 2023, finally resuming after two years due to the covid-19 pandemic.

Three-day intensive culinary competition
FHC China International Culinary Arts Competition: Display and Hot cooking with 60 sessions in total
Pastry and Bakery Competition: Display and Live with 32 sessions in total
2023 FHC Shanghai International Culinary Championship: International team compete in 2 sets, each 6 hours of live cooking. Theteams were from China, South Korea, Australia, and Italy.
The competition was judged by ten distinguished judges, all certified by Worldchefs.
The rules of the competition were as follows: teams of three chefs will cook for twelve people. Three portions will be for the jury to evaluate, one portion for the media, and eight portions for VIP guests of the show to dine at and experience a true international delight.

In order to further promote the spirit of craftsmanship, strengthen exchanges between famous chefs across the country, innovate excellent dishes, stimulate the enthusiasm of professional chefs to study hard and consciously improve cooking skills, and promote the optimization and upgrading of the industry and the high-quality and healthy development of the catering industry, China Cuisine Association will hold the First Western Cuisine Cooking skills Finals in conjunction with the 32nd China Chef Festival to be held in Fuzhou from October 20 to 22, 2023. The First Western Cuisine Cooking skills Finals included 72 players from 36 teams, and the teams came from cooking (diet, catering) industry associations, member units, related enterprises and vocational colleges in Asia and all provinces, autonomous regions and municipalities across the country. Through the competition of highly skilled chefs from all over the country, we will focus on excellent dishes that show contemporary cooking skills.

Competition Seminar instructors share techniques from both the perspective of Worldchefs Certified Judges and award-winning competitors. Participants gain an understanding of not only judging criteria but also best practices in the competition kitchen and tactics that consistently reach the highest place at the podium.
Current judges: All Worldchefs Certified Judges are required to attend a Competition Seminar every five years.
Future judges: Attending a Competition Seminar is a mandatory part of the process to become a Worldchefs Certified Judge. Participants are awarded a certificate of participation that can be submitted as one of the required credentials in an application. Attending applicable Competition Seminars is one part of the process to become a judge, and does not automatically qualify you as a Certified Judge. Applicants must fulfil additional criteria and provide evidence of support in a formal application process. This seminar is taught by Rick Stephen
Dr. Rick Stephen has been instrumental in the growth of the culinary profession. Having once an active presence in the competition arena winning many awards and accolades, he has offered guidance and support which contributes to the success of a number of chefs doing well in many competitions and in the culinary profession in Singapore, Fiji, Indonesia, Japan, Taiwan, Malaysia, China and Australia.
Dr.Stephen was elected as the Continental Director for Asia in May 2011 under the World Association of Chefs’ Societies (Worldchefs) banner covering 21 Countries. As part of the Worldchefs Congress Committee, he organised and ran the IFK competition in Korea, and did all the final preparation for the World Finals of the Global Chef and Hans Bueschkens competition since 2008. In continuing his efforts to improve the industry and as part of his Worldchefs involvement in the region, Dr. Stephen has conducted Worldcehfs approved courses and has been an instigator in training and working with young chefs.
The first Asian Pastry Young Chefs Challenge, organized by JIYI (Shenzhen) Cultural Planning Co., Ltd., will be held in Hall 5 of Shenzhen Convention and Exhibition Center on August 19, 2023.
This is the first China national-level competition for young Pastry chefs certified by the World Association of Chef’s Societies (Worldchefs).
Teams from 5 countries and 2 regions will participate in it. The 2023 Asian Pastry Young Chefs Challenge focuses on three elements “Asia”, “Youth” and “Baking”, showing the wonderful skills and innovative thinking of young Asian Pastry chefs to the world.
The competition aims to develop the youth bakery industry in Asia, enhance the capabilities of young Pastry chefs, stimulate their creative spirit, and at the same time spread the ideas of food source, food value, environmental protection and food safety. It can also further promote and inherit the baking culture.
