Dilmah to Brew Inspiration in Tea Gastronomy at the Worldchefs Congress & Expo 2018

Tea is one of the oldest ingredients used in the kitchen, and is still
one of the latest ingredients at the same time! Chef Peter Kuruvita will
elaborate on how Dilmah brings this versatile, helpful and flavourful
ingredient into the modern kitchen. In particular, during the Dilmah Tea
Gastronomy presentation, Orange flavoured Cupcakes infused with Earl Grey with
honey tea, topped with an Earl grey and honey tea frosting will be served to
every delegate at the congress.

NATURAL EARL GREY WITH
HONEY

SERVINGS:

Makes 20

INGREDIENTS

            429 grams
(2 1/2 cups) all-purpose flour

            3
teaspoons baking powder

            265 grams
(1 1/4 cups) caster (superfine) sugar

            1/2
teaspoon salt

            375
milliliters (1 1/2 cups) of milk

            125
milliliters vegetable oil

            125 grams
butter

            2
tablespoons Greek yogurt (can substitute with sour cream)

            1
teaspoon vanilla extract

            2 large
eggs

            Zest of 1
large orange (1/2 for batter, 1/2 for frosting)

            6 NATURAL EARL GREY WITH HONEY tea bags

            1-2 drops purple food gel

            2
tablespoons poppy seeds

            1 cup
orange marmalade

            2
teaspoons orange blossom water (can be purchased a middle eastern supermarkets)

            For the
frosting:

            1 Batch
of Buttercream frosting

            4-5 drops
orange food gel

 

INSTRUCTIONS

Place your milk in a microwave
safe jug and microwave for 1-2 min (keep an eye on it so it doesn’t spill
over). Place your tea bags in it and push them down using a fork or spoon. Let
them soak in the milk for 10 min and take them out. Set the milk aside to cool
down to room temp.

Preheat your oven to 180C (356F)
or 160C (320F) for a fan forced oven

In the bowl of a stand mixer
fitted with the paddle attachment, combine the dry ingredients. Turn mixer on
low and allow it to mix for a couple minutes. Add the softened butter and let
it mix until it resembles a fine sand like texture.

Next combine all milk, eggs,
yogurt, oil and vanilla extract in a large jug and whisk well.

Add wet ingredients to dry
ingredients in a slow and steady stream until no dry ingredients are visible.
Scrape down, add your purple food dye and fold in by hand or mix for another 20
seconds with your stand mixer.

Fill each paper 3/4 of the way
(using an ice cream scoop to transfer the batter into the cupcake liners makes
this a quick and easy process otherwise you can use two tablespoons). Bake for
20-25 min or until a toothpick inserted comes out clean. Allow them to cool
completely on a cooling rack before frosting.

 

 

NATURAL EARL GREY WITH
HONEY
Buttercream

INGREDIENTS

1
1/2 cups (335 g) unsalted butter, at room temperature

  3 tbsp (8g) NATURAL
EARL GREY WITH HONEY

1/2 cup minus
1 tbsp (7 tbsp / 100ml) egg whites

1 cup minus
1 tbsp (187g) granulated sugar

1 tsp vanilla
bean paste

pinch
of salt

INSTRUCTIONS

Place 3/4 cup of the butter into a saucepan
with the loose tea. Heat over medium heat until the butter melts, then reduce
the heat to low and simmer for 5 minutes. Remove from the heat and let the tea
steep for 5 minutes more. Strain the butter through a fine-mesh sieve set over
a bowl and refrigerate it until it reaches the same consistency as softened
butter (20-30 minutes). Small bits of tea may remain in the butter.

Place the egg whites and sugar in the bowl of
a stand mixer. Whisk them together by hand to combine. Fill a medium saucepan
with a few inches of water and place it over medium-high heat. Place the mixer
bowl on top of the saucepan to create a double boiler. The bottom of the bowl
should not touch the water. Whisking intermittently, heat the egg mixture until
it registers 160 F (70 C) on a candy thermometer or is hot to the touch.
Carefully fit the mixer bowl onto the stand mixer.

With the whisk attachment, beat the egg white
mixture on high speed for 8-10 minutes, until it holds medium-stiff peaks. When
done, the outside of the mixer bowl should return to room temperature and no
residual heat should be escaping from the meringue out of the top of the bowl.
Stop the mixer and swap out the whisk attachment for the paddle.

With the mixer on low speed, add the vanilla
and salt. Next add the tea-infused butter and remaining 3/4 cup of butter a
couple tablespoons at a time. Once incorporated, turn the mixer onto
medium-high and beat until the buttercream is silky smooth (3-5 minutes).

Electrolux Professional proud to equip and inspire sustainable cooking at Worldchefs Congress & Expo 2018

For the third
time, Electrolux Professional joins forces with Worldchefs to support the
Congress & Expo, taking place this year in Kuala Lumpur, July 11-14. As
part of its ongoing partnership with the global network of chefs’ associations,

World Chefs Without Borders feeds 14,500 people during Myanmar Tour for Humanity

YANGON, MYANMAR JUNE 20, 2018

 

The World Chefs Without Borders (WCWB) Myanmar Tour for Humanity recently took place in Yangon as its 1stChefs Social Responsibility global event on the 10th Anniversary since Cyclone Nargis.  60 Chefs from 22 National Member Societies of the World Association of Chefs Societies (WORLDCHEFS) travelled to Yangon at their own expense to raise funds together with the Myanmar Chefs Association www.myanmarchefs.com and cook for zero hunger in a world where humanity must come first.  

 

WCWB Chairman Willment Leong stated “Chefs may not be able to change lives, but with our Chefs Social Responsibility initiative, we can make a difference. Convert your ego to sharing and it will make you not only a great Chef, but also a great person.”

 

The first community event on the WCWB Myanmar Tour for Humanity organized by Chef Oliver E. Soe Thet, President of the Myanmar Chefs Association was held at the Shwedagon Pagoda, the most sacred Buddhist pagoda in Myanmar, where the Chefs prepared and distributed 4500 meals to the local community.  It was the first time this type of event was approved by the Yangon State Government and was strongly supported by the Union Hotels & Tourism Ministry.

 

The Tour continued by boat on the Ayeyarwady River Delta. When they landed in Twantay City, the Chefs were greeted on the pier by Abbot U Yi Wa Ra Seyadaw with 150 orphan children of the Dhamma Linkara Monasteryand 50 students accompanied by Mr. Zaw Kyi, a Free School teacher & philanthropist. Stationary packs with school supplies and dry food relief packs were distributed to the children, and the Chefs purchased vegetables from the local market to encourage its economy and then prepared meals on the boat for the villages ahead.

 

Thousands of villagers and children from 20 villages gathered together between Napyaw su Village and Ka yin Kyaung Village to welcome the Chefs and show appreciation for their humanitarian efforts. In addition to the 10,000 meals prepared and provided to the villagers and children, sporting items and WCWB teddy bears were also shared. A total of 8100 dry food relief packs was distributed throughout the day by the Chefs.

 

As a finale to the boat trip, the Chefs released 50,000 young milk fish in the Ayeyarwady River Delta near Ka yin Kyaung village to help replenish the food supply for the years ahead.

 

WCWB acknowledged the 12 local labourers that assisted in the delivery of the dry food relief packs during the Tour by recognizing them as VIP’s and awarding each a WCWB Medal of Humanity during the WCWB Myanmar Tour for Humanity Farewell and Appreciation Dinner.

 

Myanmar Chef Association President Oliver E. Soe Thet shared the country’s appreciation with the Chefs, “The Myanmar people in Yangon, the Delta and throughout the Nation, are proud and thankful for the efforts and support of World Chefs Without Borders, in particular the 60 Chefs from 22 countries that came together and initiated such a once-in-a-lifetime event in Yangon and Nargis Delta.”

 

ABOUT CYCLONE NARGIS – A HISTORICAL DISASTER 

Extremely severe cyclonic storm Nargis, also known as Cyclone Nargis, caused the worst natural disaster in the recorded history of Myanmar in May 2008. The destruction was catastrophic with at least 138,000 fatalities. Damage was estimated over K62,988,000,000, making it the most devastating cyclone ever recorded in this basin. Myanmar and its people are still struggling to recover its effect.

Chefs Opened their Hearts Again to Children Health Issues – Food Festival in Bratislava with Worldchefs WCWB Ambassador

The Wold Chefs Without Borders Ambassador in Slovak
Republic presented again the mission and activities of Worldchefs – WCWB at the
charity event that took place within the Food Festival in Bratislava, the capital
of Slovak Republic, in the premises of Bratislava castle in the days 25th
to 27th May 2018. The Bratislava castle commemorated the 301st
anniversary of the coronation of Maria Therese for Hungarian and Czech Queen and
Archduchess of Austria
.

These
three days
at Bratislava castle belonged to the
chefs and gourmands again. For the eighths time, there has been a favourite
gastronomy event
„Slovak Food Festival 2018“.
The Castle became a meeting point of both gastronomists ad gourmands. However,
it was mainly a meeting point for people with good heart, willing to help
those, the destiny was less favourable to.

Vojto Artz, the WCWB Ambassador in
Slovakia,
is already for eight years the professional guarantee.  He´s both author and organizer of the „Vojto
Artz´s COOKING SHOW“, that regularly makes part of this festival.

Within his Cooking Show he conceived
literally as a charity also this year, he welcomed on the main stage in
the festival centre several personalities not only of the world of cooking, but
also from the Slovak show-business. The meals and desserts prepared on the stage
were immediately auctioned and this way were changed to the good thing
supporting thing – 
improvement of the life conditions of the
children with health issues by means of two foundations: Foundation of Paediatric
Cardiac Centre Foundation Bratislava and Markíza Foundation.
During all three days Vojto
invited to the stage several interesting guests who presented both traditional
and untraditional chef show.
The good thing was supported
also by the members of the Slovak National Junior Team of chefs and
conditioners who are preparing for the international competition World Culinary
CUP 2018 in Luxembourg, renowned Michal
Konrád
,
Maroš Mrenica, Daniel Hrivnák, Tomáš
Pikáli, Daniel Širota and Vlado Lokšík
. The
well known chefs from Czech Republic, Róbert
Sklená?,
member of the Prague branch of the Association of chefs and
conditioners of Czech Republic and the chef Oskar Klanert demonstrated their
craftmanship too.

The children´s workshop „Vojto and Tinka cook with children“, was not missing
either, during which the little chefs were perfectly supported by the audience.

All these participants contributed to
the fact that a nice sum was collected
in the amount of
700,00 Eur.
Within three days, the yield will go to the accounts of
Paediatric
Cardiac Centre Foundation Bratislava and Markíza Foundation.
  We are happy that together we´ll succeed to make
the life easier for the children with harder destiny.

Worldchefs Endorsed Thailand Ulitmate Chef Challenge during THAIFEX 2018

BANGKOK, 06 JUNE 2018 – The 15th and
largest edition of THAIFEX-World of Food Asia came to a close on Saturday, 02
June 2018, after five action-packed days on the show floor. A total of 13,110
international trade visitors from over 150 countries were present at the
region’s largest dedicated F&B trade show, representing a 9.4% growth from
the 2017 edition and surpassing all of the show’s previous records.

This brought the total trade
visitor count to a whopping 62,039 – a 12.6% increase from the previous show,
surpassing the expected number of 60,000, and the largest visitorship at THAIFEX-World
of Food Asia to date.

An impactful platform that
showcased the synergistic partnership between the government and private sector
to address growing F&B demands and concerns in Asia, THAIFEX-World of Food
Asia is jointly organized by Koelnmesse Pte Ltd, the Department of
International Trade Promotion, and the Thai Chamber of Commerce.

“The potential of ASEAN is
tremendous. We've been recording strong double digit growth since 2014, in
conjunction with the establishment of the ASEAN Economic Community. In fact, we
have been adding an average of 10,000 sqm to the show every year since then,
and we’ve even carved out an additional two trade days this year to better
facilitate business exchange,” said Mathias Kuepper, Managing Director,
Koelnmesse
. “This year's record-breaking figures are a testament to the
attractiveness of the ASEAN F&B market, and we’d like to give our heartfelt
gratitude to all exhibitors, buyers, and visitors for their constant support.”

The platform for
business and commerce

THAIFEX-World of Food Asia 2018
played host to 2,537 exhibitors, recording a remarkable 17% increase from the
previous year, attesting to the increasing importance of the ASEAN region to
the F&B industry. Representatives from countries such as Argentina,
Belgium, Germany, Japan, South Korea, the Philippines, and Vietnam held a
strong presence at the show, with international exhibitor numbers on par with
local exhibitors for the second year running.

Echoing the same sentiments, Mrs.
Napawan Promkhatkaew, Managing Director, Family Tree Foods Co. Ltd
said, “The
online business matching and database management tools at THAIFEX-World of Food
Asia contributed greatly to our successful participation as an exhibitor this
year. Not only were we able to widen our business networks and meet prospective
customers from other parts of the world such as Latin America, Africa and the
Middle East using these tools, the strong promotional efforts of the organizers
also meant our existing customers knew about our participation at the show, and
took time to fly in to Bangkok to meet us here.”

 

Across 01 and 02 June, more than
3,000 buyers were hosted by the Department of

looking to penetrate the burgeoning F&B market in ASEAN.

Affirming Thailand as Kitchen of

This year’s Thailand Ultimate Chef
Challenge (TUCC) certainly did not disappoint visitors as the world’s elite
culinary talents cooked up a storm, preparing a myriad of local and
international delicacies. The highly popular culinary challenge saw more than
1,300 entries from 10 countries pitting their skills against one another, all
vying for the coveted championship titles of the various challenges within the
competition.

Together with more than 40
international judges from 11 countries, this year’s collaboration between
Koelnmesse, Thailand Chefs Association and the Worldchefs (WACS) crowned the
following champions:

brought together 14 famed baristas from around the world, where they showcased
their finesse in coffee brewing and perfected latte art.

Espresso and brew tasting
masterclasses were also held to cater to budding coffee

where baristas and exhibitors offered tips and tricks on how to perfect 3/4 the art of
making coffee.

“I thoroughly enjoyed the
opportunity to learn different brewing techniques from other champion baristas
from around the region. It was amazing to see how our shared passion for coffee
connected us despite our different cultural backgrounds. Although this is the
first time I’m taking part in a trade exhibition, my experience at the
Celebrity Coffee Bar has inspired me to start sharing sessions back home in the
Philippines to spread the love for coffee with both amateur and professional
baristas,” said Mr. Aldrin Lumaban, 2018 Philippine National Barista
Champion
.

Minimizing food waste and giving
back to local communities

According to the UNEP, roughly 30%
of the food produced worldwide is lost or wasted every year. Hence, in
partnership with the Thai Scholars of Sustenance (Thai SOS), a foundation
committed to increasing food security through the management of food waste,
exhibitors at THAIFEX-World of Food Asia came together to collect leftover food
during the teardown of the show. The food donation was then inspected, packed,
and stored appropriately by Thai SOS, before being delivered to local
communities in need of supplies.

New features for 2019

Keeping abreast of industry trends,
and proactively gathering insights from show attendees, both new and revamped
segments have been carved out for next year’s THAIFEX-World of Food Asia.
Exhibitors and visitors can look forward to a new trade show featuring fresh
produce, evolved from this year’s THAIFEX Fruits and Vegetables. At the same
time, the THAIFEX Frozen Food trade show will expand to include frozen fruits
and vegetables to better streamline and facilitate buying processes.

A future trend fuelled by the
increasing prevalence of food allergy is the “free-from” market, which will
debut at the show next year, featuring products that are free from allergens,
such as non-GMO, gluten-free, dairy-free, nut-free, and sugar-free.

WORLD CHEFS WITHOUT BORDERS MYANMAR TOUR FOR HUMANITY 2018 BEGINS!

YANGON, MYANMAR JUNE 9, 2018

 

The World Chefs
Without Borders (WCWB) Myanmar Tour for Humanity was launched today in Yangon as
its 1st Chefs Social Responsibility global event
on the 10th Anniversary since Cyclone Nargis.  60 Chefs from 24 National Member Societies of
the World Association of Chefs Societies (WORLDCHEFS) have travelled to Yangon at
their own expense to raise funds together with the Myanmar Chefs Association www.myanmarchefs.com and cook for zero
hunger, in a world where humanity must come first. 

 

The Tour kicked off at Pullman Hotel
Yangon with a VIP Gala Dinner for 200 guests led by Chefs: Tony Khoo, Myanmar;
Chef Tony Chang, Taiwan; Chef Mak Kam Kui, Hong Kong; Chef Louis Tay,
Singapore; Chef Buddy Trinidad, Philippines and Chef KK Yau, Malaysia. 

 

Special guests attending the Event
included Myanmar Hotels and Tourism Union Minister,
His Excellency U Ohn Maung
; General Manager UBM Myanmar, Fraser Hawkes,
whom has also contributed personally and will be joining the Chefs for the
Tour; and the Tour partners, sponsors and supporters.

 

All funds raised at the dinner will go
towards the Myanmar humanity aid and relief initiative led by Oliver Esser Soe
Thuet, President of the Myanmar Chefs Association.

 

Throughout the WCWB Myanmar Tour for
Humanity, Chefs will use their skills and dedication to raise awareness of
those lacking sufficient resources for their communities and families. 

 

WCWB Chairman, Willment Leong stated
“Hunger should not be tolerated and the basic necessities of life must be
provided to those who need our help.  We
have come together in Myanmar for this Tour because We Are Chefs, We Have No
Borders!”

 

Myanmar
events will continue to take place until June 13, 2018 and will include a
Ground Cook Off preparing 4,000 meals at Shwedagon
Pagoda, the most sacred Buddhist pagoda in Myanmar
and a Boat Cook Off
preparing 8,000 Meal for 3 villages.

CYCLONE NARGIS – A HISTORICAL DISASTER

Extremely severe cyclonic storm
Nargis, also known as Cyclone Nargis, caused the worst natural disaster in the
recorded history of Myanmar in May 2008. The destruction was catastrophic with
at least 138,000 fatalities. Damage was estimated over K62,988,000,000, making
it the most devastating cyclone ever recorded in this basin. Myanmar and its
people are still struggling to recover its effect.

Worldchefs Endorsed East European Culinary Cup – a Great Cultural Meeting in the Culinary World

Brasov (Romania), May 2018:

East European Culinary Cup, organized by ACEEA –
Euro-East Alternative Cultural
Association and Euro-Toques
Romania, took place in Brasov, Romania, 26-27th of May 2018.

It was a large cultural meeting, uniting professional people from different countries: Romania,
Macedonia, Cyprus, Serbia, Belarus,Slovakia, Ukraine,Mongolia, South Korea,
Philippines, Iceland, Denmark, Qatar, UAE, Israel, Palestine, India, United
States of America, Turkey,Croatia, Rusia, Slovenia,Tunisia.

The competition featured several classes (cooking, pastry and art classes)
and it was judged by a
prestigious jury presided by
Mr. Iztok Legat, with the vice-presidency of Mrs Maria Shramko.

In this high professional spirit the event
featured also live cooking shows by ACEEA members and traditional cooking
session, but also discussions in Gastrosophia, a communication session on
several
culinary topics. On the
scene of Gastrosophia important speakers like Adrijana Alacki,
Ray McCue, Majeed
al Sabagh, Anil Grover, Rafik Tlati
and dr. Iulia Dragu?, president of ACEEA discussed about the commonalities
and differences among world’s cuisines, about gourmet cuisine, about waste
