Mark Your Calendars: International Chefs Day is October 20th!

Each year on October 20th, we celebrate International Chefs Day. ย Since its creation, by the Late Chef Dr. Bill Gallagher in 2004, Worldchefs has committed to using International Chefs Day to celebrate our noble profession, always remembering that it is our duty to pass on our knowledge and culinary skills to the next generation of chefs with a sense of pride and commitment to the future.

Over the past years, Worldchefs has partnered withย Nestlรฉ Professionalย to teach children around the globe about the importance of healthy eating by hosting fun-filled workshops worldwide.

In 2020, many Chefs around the globe did not have the opportunity to have events due to COVID-19 and created short videos to share with children on social media, which became a big hit. The videos allowed us to reach approx.112,000 children. Unfortunately, uncertainty is still around many of us, but we will continue to reach as many children as possible either in-person at a workshop or through online learning and social media. To help, Nestlรฉ Professional has made fantastic adaptions to the toolkit to make online learning easy and accessible.

As Chefs, we are all paying closer attention towards keeping ourselves and others healthy. Having a strong immune system and eating “stress-busting” foods will help us through these challenging times.

We can also help our children, the Worldchefs way by working together in Preparing Children for a Healthy Life. International Chefs Day will once again promote the theme:ย Healthy Food for the Future.

In 2021, International Chefs Day will also emphasize sustainability and the environment to ensure a healthy planet for future generations. It is vital for us to teach children about the impact that production and consumption of food has on the environment.

We will use this opportunity to teach children about healthy eating by letting them be creative with food. With the Chefโ€™s input, education and help, children will be able to create recipes out of healthy foods and support Healthy Food for the Future.

HOW CAN YOU PARTICIPATE?

All Chefs from around the globe are invited to host their very ownย Healthy Food for the Futureย workshop in their region. It can be a workshop for your own children, or a workshop for 300 children, every child can benefit from this experience, and it is important to share this opportunity and message for them to learn and enjoy eating something new!

A toolkit with everything you need to run an event, from instructions to materials to recipes to social media tips, has been prepared for you. Thanks to the Chefs who contributed to the 2021 campaign by submitting recipes! The complete toolkit can be downloaded below. International Chefs Day Committee members and Nestlรฉ Professional regional managers in selected areas are standing by to help you find a venue, connect with schools and more. The Australian Culinary Federation Announces a New Partnership Between Australian Culinary Federation Young Chefs & Simplot Australia Pty Ltd.

As the new principal partner of the ACF Young Chefs for 2021/22 Simplot Australia will be providing 200 young Australian chefs, apprentices or culinary students under the age of 25 years old with 12 month membership of the ACF Young Chefs & the ACF. ACF young chefs are established in all ACF regions & are mentored by leading chefs in their state or territory

Simplot is also working with the ACF to help raise young chefs’ profile in Australia and promote the advantages of belonging to an industry-based association.

    Global Vegan Chefs Challenge to Launch in 2024

    Paris, 13 of July 2021  – The World Association of Chefs Societies (Worldchefs) announced today the Global Vegan Chefs Challenge will be launched during the 2024 Worldchefs Congress in Singapore.  

    Worldchefs President Thomas Gugler stated, “The Global Vegan Chefs Challenge will be an exciting opportunity for Worldchefs members interested in expanding and showcasing their expertise and knowledge of Vegan Cuisine.”

    As part of the Global Chefs Challenge Series, the Global Vegan Chefs Challenge will join the Global Chefs Challenge, Global Pastry Chefs Challenge and Global Young Chefs Challenge.

    Global Chefs Challenge Finals 2018

    The Global Vegan Chefs Challenge will include 8 countries with 1 team per Continent (7) and 1 team representing the host country, bidding to take home the title of Global Vegan Chef Champion. Each Continent will be required to select their finalist through a semi-final cook-off.

    The teams will consist of a chef (any age) and an apprentice, culinary student or commis chef under 25 years of age as of January 1, 2024. They will be required to prepare and present a well-balanced 4 course Vegan Menu including amuse bouche, cold or warm appetizer, main course, and dessert.

    Culinary Competition Committee Chairman Rick Stephen stated, “The Global Vegan Chefs Challenge will support Worldchefs mission as leaders in global culinary advancement and culinary competitions.”

      Worldchefs Certified Judging Levels Expanded to Support Skills Development

      • The Worldchefs Culinary Committee has expanded Worldchefs Certified Judge levels to support the highest standards in culinary competitions and juries.
      • The new model provides additional opportunities for skills development in culinary competition judging.
      • Worldchefs Certified Judges will be issued updated Worldchefs’ certificates and digital badges matched to their new judging level. Individuals are encouraged to update their Worldchefs online profile for the most up-to-date information on the Worldchefs Certified Judge Directory.

      Paris, 6 of July 2021 – The Worldchefs Culinary Competition Committee (CCC) has expanded Worldchefs Certified Judge levels to support the highest standards in culinary competitions and juries. The new model has been developed as part of the CCC’s mission to advance standards of excellence built on professionalism, leadership, and collaboration.

      “The whole idea of the change was to modernize our approach to every changing aspect of the culinary world,” says Rick Stephen, Worldchefs Culinary Committee Chairman. “Keeping up with food and the world standards and the new challenges that face all food-related competitions with hygiene and food waste been paramount.”

      The new levels will provide additional opportunities for skills development in culinary competition judging. Worldchefs Certified Judges can progress through the judging levels over the course of their career and culinary competition experience to reflect their commitment and expertise in the field.

      The Culinary Committee has taken a dynamic approach to incorporate mentorship and peer learning into the new model. A Learner Judge-or Rookie Judge-level has been introduced to advance the future of juries, encouraging competitions around the globe to take a more active role in supporting the new guard of international competition standards.

      “We envisage the opportunity to feature more traditional cuisines from our members’ regions and countries, but also to have these cuisines on the international stage and be judged by experts in that style of cuisine,” says Stephen.

      Complete information on the application process and requirements to become a Worldchefs Certified Judge can be found here. A brief outline of the new judging levels is as follows:

      1. Rookie / Learner Judge: Qualifying candidates with the necessary endorsements can serve at a Rookie / Learner Judge level. Proof of participation as a Rookie / Learner Judge at Worldchefs Endorsed Competitions can be used as supporting documents in applications for all Worldchefs Certified Judge levels.
      2. Sponsored Judge: Qualified chefs recognized as experts from a reputable company or institution can serve at a Sponsored Judge level. Sponsored Judges are mentored by a Worldchefs Certified Judge prior to any event.
      3. Worldchefs Certified Regional Judge: The Worldchefs Certified Regional Judge level is designed for culinary competition jurors with a local scope, not just limited to regional, but also international regions where your language or cuisine may be featured. This is a stepping stone to the next level.
      4. Worldchefs Certified Continental Judge: The Worldchefs Certified Continental Judge level represents mid-level culinary professionals with some judging experience, including competitors with silver medal performance and/or a minimum of two years in a high-end restaurant environment. The Worldchefs Certified Continental Judge level has replaced the former B Judge level.
      5. Worldchefs Certified International Judge: The Worldchefs Certified International Judge level represents senior-level culinary professionals with advanced judging experience, including competitors with silver medal performance and/or a minimum of five years in a high-end restaurant environment. The Worldchefs Certified International Judge level has replaced the former A Judge level. The new rules also allow for Worldchefs Certified International Judges to serve as observer judges.
      6. Worldchefs Honorary / Life Judge: The Worldchefs Honorary / Life Judge level is awarded by the Worldchefs President for outstanding contributions to Worldchefs and competition programs. Recipients must be in good standing as a Worldchefs Certified Judge at any level.

      Additional requirements for specialized credentials still apply for applications to judging categories, which now include: Culinary Arts & Hot Kitchen, Pastry Arts, Carving, Community Catering, and Vegan/Plant-Based Cuisine.

      Current Worldchefs Certified Judges will be issued updated Worldchefs’ certificates and digital badges matched to their new judging level. Individuals are encouraged to update their Worldchefs online profile to ensure the most up-to-date information on the Worldchefs Certified Judge Directory.

        Mourning the Loss of Wynand Vogel

        Paris, 25 June 2021 It is with great sadness that we share with you the news of the passing of our honorary member Wynand Vogel, last week. During a private funeral yesterday, we had the opportunity to bid Wynand farewell. It was the wish of both Wynand and his family to announce his passing only after the funeral had taken place.

         

        We will remember Wynand as a very committed member of the Gastronomisch Gilde.  Under his leadership the competitions of the Gastronomisch Gilde have become the success they are today. Wynand was associated with the Culinary team the Netherlands for decades. First as chef d’equipe, later as chef de mission. Many successes have been achieved under his leadership. He was actively involved in our association and we were grateful for how he shared his valuable knowledge and advice. 

         

        As a judge and chairperson for Worldchefs, both at home and abroad, his expertise for cooking competitions has been widely recognized and praised.

         

        We are all going to miss Wynand’s sincerity, humor, commitment and most of all his friendship. 

         

        Our thoughts go out to all those who loved him and we wish them strength at this difficult time in dealing with this enormous loss.

        Chefs Across the Country Unite as the Australian Culinary Federation Launches One Truly National Association

        Following a tumultuous 2020 Australian chefs have become further united as each state & territory organisation under of the Australian Culinary Federation umbrella joins to form a single-entity professional organisation representing chefs across the nation.

        The amalgamation of each of the regions will see stronger pathways for collaboration, interstate transfers, upskilling and career development, resulting in a more robust and cohesive industry overall. 

        Australian Culinary Federation national president Karen Doyle explains, ‘Never has there been a more important time to galvanise the Australian hospitality industry. The new amalgamation will make it quicker and easier for the industry to get back on its feet, following what has been the most challenging year since the federation began 27 years ago.

        ‘With one dream, one team and one voice, we will be taking industry standards to new heights and will be stronger in lobbying government and stakeholders on key issues affecting our industry. Together, we will raise the bar higher so that diners can experience an even better world-class offering than before,’ she said. 

        The new structure encompasses eight designated regions; Tasmania, Victoria, NSW ACT & Regions, South Queensland, North Queensland, Northern Territory, Western Australia and South Australia, which will each be managed by dedicated committees of volunteers to deliver an array of networking events, classes and competitions.

        New initiatives for the association include:

        A united brand identity – a new logo, featuring the design elements of a white chef’s hat to symbolise professionalism and prowess, and the kangaroo as a symbol of national progress of he association (they only move forward), with colours representative of Australia’s diverse cultural heritage in recognition of the ACF’s ongoing commitment to inclusiveness.

        Membership – an increased number of individual membership categories, multi-year memberships, new training provider and corporate memberships, and discounted membership for establishments.

        Digital Badging – the ACF has developed a digital badging system powered by Learning Vault which recognises membership levels and longevity, event attendance, chef certification, sponsorship levels, and participation at and achievement in our competitions.

        Education – the ACF is developing a micro-credential and learning platform for members, with more than 100 courses to support best practice in our field – these courses are non-accredited, but endorsed by the association.

        Certification – The ACF’s Chef Certification Program offers six certification levels: Qualified Cook, Professional Chef, Pastry Chef, Chef de Cuisine & Culinary Educator. Certification enhances chefs’ reputations by providing an assurance that they have the knowledge and skills required for a position.

        Reciprocal agreements with World Chef’s Global Hospitality Certification Program are in place and fast tracking pathways have been developed.

        ACF Star Rating Service – In order to receive an ACF star rating, products must meet objective testing criteria as determined by a customised panel of chefs with extensive and diverse culinary experience. ACF testers give unbiased, expert opinions.

        Sponsorship – Following restructuring of its sponsorship categories, the ACF is pleased to announce a new Principal Partner agreement with Tabasco, complemented by continued Principal Partnership with Nestlé Professional.

            Dear Chefs, Colleagues, and Friends from all around the World,

            With great sorry and very sad feelings,  I have to inform you about the passing away of our dear friend Andrés Atapoma Simeón President APCCA (Peruvian Chefs Association).

            An outstanding personality with a heart of gold who hosted one of our Board of Directors Meetings in his home country. It was his biggest dream to host us and we were proud to join him and all the members of APCCA and Worldchefs in Lima, Peru. The Board of Directors had an extraordinary experience with Peru at its best with all its treasures and jewels of culture, cuisine, and hospitality. Peru is a beautiful country with stunning cuisine and so many talented chefs.

            For us culinarians, this is a very great loss, especially for all the Peruvian Chefs and the hospitality industry.

            Andres as APCCA President was a leader and role model. The chefs from all around the country respected him for his passion and commitment. He demonstrated great leadership, friendship, and at the same time a very big heart for all. He took all the efforts possible in his hands to make Peruvian Gastronomy special and receive recognition worldwide.

            I would like to extend my personal condolences and those of the entire Board of Directors and global Worldchefs community.

            We will miss you my friend and know GOD will take care of you on your journey to a better place. Our prayers will be with you and we as chefs will always remember you.

            On a personal note, I must share with you that unfortunately his wife and son are very sick as well. APCCA (Peruvian Chefs Association) has asked us to make a plea for donations if possible from the Worldchefs community to help his family in their time of illness and need.

            On 15 March 2021, the IDX_FS International Digital Food Service Expo powered by INTERNORGA (IDX_FS Expo), the digital industry event for the catering, foodservice and hotel industries, will get underway. One week before the start of the three-day digital format, the three partners and organisers – INTERNORGA, IDX Events GmbH and the Institute of Culinary Art – as well as a member of the INTERNORGA Exhibitor Advisory Board, explain in an online press conference the current situation amid an ongoing pandemic, the special features and highlights of the event, and the relevance of digital events. The focus is on the varied programme, presented from three stages in Cologne and Hamburg. In addition to an innovative, virtual platform with 100 exhibitors and partners, the IDX_FS Expo will present a series of top-class speakers, well-known competitions and award ceremonies, as well as new formats.

            The IDX_FS Expo from 15 to 17 March 2021 will create an industry format that is intended to encourage people, especially in times of ongoing uncertainty. ‘The entire trade fair industry was severely restricted by the coronavirus pandemic. At the same time, however, it has also led to new food for thought and significantly accelerated digitalisation. The IDX_FS Expo is not only an absolute must for all those involved in the foodservice and hospitality market, but also sets new benchmarks when it comes to digital approaches to trade fairs,’ says Bernd Aufderheide, Chairman of the Management Board of Hamburg Messe und Congress GmbH.

            Three exciting days of inspiration, food for thought and pioneering trends await attendees from the catering, foodservice and hotel industries. Claudia Johannsen, Division Manager at Hamburg Messe und Congress GmbH, sees the IDX_FS Expo as a strong signal to the industry and is looking forward to an inspiring and lively event: ‘For decades, INTERNORGA has been a hotbed of new trends and fresh impetus, and is known as a high-quality platform for the entire foodservice and hospitality market. We are thrilled that in this unusual year, with two great partners at our side, we are able to offer the entire foodservice and hospitality market a digital platform with the IDX_FS Expo that promises a varied supporting programme, as well as offering exhibitors and visitors opportunities to interact.’

            The aims of the industry event are: to connect national and international players from the fields of gastronomy, foodservice, catering and the hotel industry, as well as exhibitors and visitors, both digitally and virtually, and to stimulate exchange and networking. ‘That is unique,’ says Michael Buck, Managing Partner of IDX EVENTS GmbH, the technology and event company that is making the worldwide launch of the IDX_FS Expo possible with the help of a novel distribution platform. ‘We believe that this also provides great added value for all participants and attendees of the digital event. The event will motivate stakeholders in the industry to look positively to the future. Virtual formats will not disappear in the future, but the companies involved and all the rest of us can learn now how to navigate this new hybrid world.             The Institute of Culinary Art (ICA), as sponsor of the trade fair, sees the digital exhibition approach for the entire foodservice and hospitality market as an opportunity to continue to do business successfully in the future and to redefine the value chain. ICA President Gerhard Bruder views the direct gathering of information as a particular source of added value: ‘The possibilities of digital mean visitors can find much of what they are looking for considerably faster. Depending on their interests, they can go straight to the food producers, and then, for example, to the checkout systems – without walking the long distances through the trade fair. They can immediately view the innovations there and interact directly via video.’

            MKN Maschinenfabrik Kurt Neubauer GmbH & Co. is an exhibitor and has been a member of the INTERNORGA Exhibitor Advisory Board for many years. Its CEO, Georg Weber, highlights the advantages from an exhibitor’s point of view: ‘Firstly, a participating company benefits from greater reach than at a physical event. The digital format is also used by people for whom travelling to a trade fair in person would be impossible or too expensive. This will significantly increase the potential number of participants in the event.’ Weber also emphasises that the format offers more wide-reaching opportunities: ‘We see the IDX_FS Expo as an opportunity to gain new digital experience and to use this platform for the exchange of expert knowledge beyond the boundaries of our field. We want to enter into dialogue with existing partners and potential customers and present our product highlights. Of course, we also can’t wait to meet and exchange ideas again in person at INTERNORGA in Hamburg. Nothing can replace that physical event.’

            Wales pressing ahead with plans to host worldโ€™s top chefs in October

            WALES, 3rd of March 2021 – Wales pressing ahead with plans to host world’s top chefs in October

            Organisers have confirmed that plans for a prestigious four-day culinary event, which will attract the world’s best chefs to compete in Wales in October, are progressing at full speed.

            The Worldchefs Global Chefs Challenge, which comprises three competitions, will be held at the Celtic Manor Resort, Newport from October 23-26.

            The only major Worldchefs event organised this year, the Global Chefs Challenge is being hosted by the Culinary Association of Wales (CAW) and its partners, the International Convention Centre Wales (ICC Wales), the Celtic Manor Resort and the Welsh Government.

            The CAW has appointed professional conference organiser Worldspan to organise the globalevent. The company has a wealth of experience, delivering 5,000 events across 84 countries.

            Sophie Morris, Worldspan’s managing director, said: “We are delighted to be supporting the Culinary Association of Wales as hosts of the Global Chefs Challenge. From our HQ in North Wales, we are celebrating almost 50 years of delivering events and experiences for our clients.

            “To support this event, showcasing the best of Welsh food and drink, on our home ground is a privilege.  Our team looks forward to supporting CAW as they welcome the world to Wales.” 

            CAW president Arwyn Watkins, OBE, said the decision to press ahead with the event was a massive vote of confidence in Wales by Worldchefs, which represents more than 12 million chefs from 108 countries worldwide.

            “We believe that the Global Chefs Challenge will be a fantastic opportunity for the hospitality industry to open up again following the global pandemic,” he added. “Our plans are progressing well, boosted by the enthusiastic support that we are receiving from Worldchefs.

            “Hosting a global event of this magnitude in Wales is a huge honour and undertaking, but the Culinary Association of Wales and its partners relish the challenge of welcoming the world’s best chefs.

            “Hopefully, this event will support the steps being taken to help Wales bounce back from the pandemic’s severe economic impact.”

            The event will feature the Global Pastry Chefs Challenge on the first day, the Global Chefs Challenge on days two and three and the Global Young Chefs Challenge for the Hans Bueschkens Trophy on day four. Wales will have a chef competing in each of the competitions.

            Lesley Griffiths, Wales’ Minister for Environment, Energy and Rural Affairs, said: “While we face the continued backdrop of the COVID-19 pandemic, it is, of course, very pleasing to see that the Culinary Association of Wales and the Celtic Manor Resort are planning to hold the Worldchefs Global Chefs Challenge in October.

            “I am pleased that organisations planning ahead for events continue to look at Wales as a destination.”

            Worldchefs have given a vote of confidence to the CAW and its partners to organise a safe and professional event for chefs.

            Worldchefs president Thomas A. Gugler said: “Wales and the Global Chefs Challenge – an amazing opportunity and match with a fantastic venue – will welcome chefs from around the globe for the first time, and for me it’s a must to attend.

            “Great vision, modern approach and a dedicated team behind the scenes. COVID 19 will not stop us as we believe in the ‘Power of the white jacket’. All participants will be overwhelmed by the hospitality, the warm welcome and the stunning landscape around.

            “I am looking forward to seeing you all at the Worldchefs Global Chefs Challenge in Wales. I wish Arwyn and the team good luck for all the preparations and thanks for the amazing dedication.”

            The CAW and the Celtic Manor Resort has a successful track record of hosting Worldchefs’ events. In 2017, the country hosted a successful Worldchefs European Congress and, in 2019, welcomed a Worldchefs board meeting.

            The Celtic Manor also hosted Ryder Cup in 2010 and a NATO Summit of world leaders in 2014.

            The Celtic Manor Resort, which is to welcome the world’s best chefs next October.
