12th International Culinary Competition of Southern Europe.

The 12th International Culinary Competition of Southern Europe has come to an end. Congratulations to all participants!

The International Culinary Competition of Southern Europe is organised every two years by Culinary Professionals Greece, in collaboration with TIF HELEXPO SA and is supported by the Worldchefs.

The 12th International Culinary Competition of Southern Europe, the largest gastronomic event in South Europe, was a great success. The event welcomed 400 students and professional chefs, as well as international judges, from 15 countries all over the world. Held from February 17 to 20, 2023 at the International Exhibition & Congress Centre (TIF HELEXPO SA), Thessaloniki, Greece.

This year’s competition included 27 different categories based on the rules, regulations and judging criteria as specified by Worldchefs.

The competition prizes

The level of participants was high and the total number of medals awarded was 250. Specifically, the prizes awarded are:

  • Top Class Trophy School of the Year according to all the medals it received by TIF-HELEXPO, at IEK DELTA 360ο, Greece
  • Top Class Trophy School of the Year by Boskos Food, at the Cyprus University of Technology “TEPAK”
  • Top Class Trophy Student Chef of the Year by Provil, to Aleksandrov Aleksandar from Culinary Art Institute “CAI”, Bulgaria
  • Top Class Trophy Professional Chef of the Year by Region of Central Macedonia, to Miltiadis Miltiadou from Intercollege, Cyprus
  • Top Class Trophy Student Chef “Fish from Greece” by HAPO, to Andreas Siakallis from Intercollege, Cyprus
  • Top Class Trophy Professional Chef “Fish from Greece” by HAPO, to Dimitris Melissopoulos from Eagles Villas, Greece
  • Top Class Trophy Student Chef Vegeterian Dish “Monk Epifanios” by Mylopotamos, to Evangelia Malamata from IEK DELTA 360ο, Greece
  • Top Class Trophy Student Chef “Traditional Greek Dish” by Thessaloniki City of Gastronomy, to Ioannis Nouris from IEK DELTA 360ο, Greece
  • Top Class Trophy Student Chef “Lamp” by Thessaloniki Tourism Organization, to Čolič Lazar from High School of Culinary Arts and Tourism with Dormitory, Serbia.

Jury

The Chairman of the Jury was Roberto Beltramini from Luxembourg and the judges were Tony Chang, Georg Wallig, Ray McCue, Daniel Schade, Joachim Mueller, Niclas Melin, Rohan Fernandopulle, Hossam Soliman, Nikolas Constantinou, Georgios Kyprianou, Emrah Köksal Sezgin, Panayiotis Hadjisymeou, Ilias Maslaris, Dimos Kalaitzidis, Dimitris Pamporis, Nikos Christoforou, Theodoros Gavezos and Christos Gremos.

Zero Food Waste and Solidarity action towards the earthquake victims

One of the innovations of this year’s event was Zero Food Waste, where the minimum percentage of waste was sought through proper food management.

On the initiative of the committee of judges of the event, the amount of 1.600€ was collected which will be deposited to World Chefs Without Borders for the needs of the earthquake victims in Turkey.

The celebration of Culinary Professionals

The International Culinary Competition of Southern Europe, which is organized every two years, is a great celebration of culinary professionals and is part of the continuous effort made by the Culinary Professionals Greece, with the main concern being the development of healthy competition among culinary professionals, the exchange of knowledge and new techniques between them at international and local level and by extension, their development.

The Culinary Professionals Greece congratulates all the participants who succeeded with their creativity and their passion for the culinary art to impress the demanding jury, displaying their skills and ethics throughout the competition.

Worldchefs Academy Launches Free E-Learning Sustainability Education for Culinary Professionals Course

  • Graduates receive a Worldchefs certificate and digital credential in the form of a digital badge, an important way to make skills visible whenseeking employment in professional kitchens or demonstrating commitment to the sustainability movement.

Paris, 13 of July 2022 – Worldchefs Academy has expanded their course offerings, adding Sustainability Education for Culinary Professionals to the line-up of free courses available for chefs around the world and at any stage of their career. The online course includes eight lessons to help learners engage with key themes and deepen their knowledge of sustainable culinary methods.

The curriculum teaches chefs how to think and act sustainably, with modules on the Big Picture, Agriculture, Animal Husbandry, Seafood, Energy, Water, Waste Management, and Sustainable Nutrition. Upon completion of the course, participants are equipped with the theory required to complete an online assessment, and receive a Worldchefs certificate and digital credential in the form of a digital badge – an important way to make skills visible when seeking employment in professional kitchens or demonstrating commitment to the sustainability movement.

“Whether you are learning the basics needed to start a career in culinary arts or expanding your knowledge on sustainability, Worldchefs Academy provides important tools for career development,” says Ragnar Fridriksson, Worldchefs Managing Director. “Beyond skills, the Sustainability Education for Culinary Professionals course empowers chefs to take action for people and planet, helping chefs to harness ‘the power of the white jacket’ and take on their responsibility to share healthy and sustainable habits with the many people they feed.”

Worldchefs Academy launched the flagship Pre-Commis Chef Training Program and mobile app in 2018 with the support of Nestlé Professional and the Pro Gastronomia Foundation. Offering culinary education for aspiring chefs that may not have the means, mobility, or flexibility to attend full-time culinary school, the Pre-Commis Chef course is designed to prepare students for their first job in professional kitchen. The program also links to Worldchefs Global Culinary Certification opportunities and is intended to be the first step on the culinary career pathway.

Learners can now access both the Pre-Commis Chef Training Program and Sustainability Education for Culinary Professionals through the Worldchefs Academy online portal: www.worldchefsacademy.com. Participants can learn through the web-based platform or via the mobile app offering an offline study mode. By connecting to the internet when it is available, they can download the course via the mobile app and study at any time, with or without internet access. Then they go back online when ready to complete the final assessment.

The Pre-Commis Chef Training Program is available in English, Spanish, Portuguese, Arabic, Italian, German, and Mandarin. The Sustainability Education for Culinary Professionals Course is available in English with additional languages to follow.

It was the most spectacular gathering with over 100,000 people in attendance as World Association of Chefs Societies (Worldchefs) President Thomas Gugler, CEO Bernd Breiter, BigCityBeats and European Space Agency (ESA) Astronaut Matthias Maurer joined together in Frankfurt, Germany at the Space Club Kitchen to launch the millennium humanitarian event.

Smile Kitchen Academy was established in 2017 by Chef Noor Albatta as the first and only culinary school in the Gaza Strip. Since its founding, more than 1500 students have graduated with training in the culinary arts, management, and entrepreneurship. The Smile Kitchen Academy diploma is a double degree program awarded by Smile Kitchen Academy and the University of Gaza and is recognized by the Palestinian Association of Chefs.

Smile Kitchen Academy also provides opportunities and training for students interested in entering the world of international culinary competitions. In 2019, the first Smile Kitchen Talent culinary competition was held in Gaza with the participation of 75 chefs. In 2021, Smile Kitchen participated in an international competition in Dubai with four students awarded five medals. In 2022, Smile Kitchen participated in the Egypt Culinary Cup with five students, winning eleven medals including two gold.

The 39th biennial Worldchefs Congress & Expo 2022 arrives in Abu Dhabi, United Arab Emirates

Abu Dhabi , 24 May 2022 – The 39th biennial Worldchefs Congress celebrates the association’s 94 year history with huge anticipation, with a stellar line-up of iconic speakers, intense culinary action with the world final of the Global Chefs Challenge, extensive Education sessions and a spectacular Expo (ExpoCulinaire) with exhibitors from around the world running alongside the 25th Emirates International Salon Culinaire plus the team based African Culinary Cup.  Her Excellency Mariam Almheiri – Minister of Climate Change and Environment will attend as Keynote Speaker for the Conference.

Taking place from 30th May to 2nd June at ADNEC, Abu Dhabi, the event will finally take place after 4 long years – since the last Congress in Kuala Lumpur, Malaysia after which the 2020 edition in Saint Petersburg, Russia was cancelled.  The Emirates Culinary Guild and the Department of Culture and Tourism, represented by Abu Dhabi Convention & Exhibition Bureau have worked tirelessly with Worldchefs to ‘rise together’ and reignite the global culinary network of chefs and industry experts.

Thomas Gugler, President of Worldchefs, said “The Worldchefs Congress is about to happen, it’s a time when inspiration, innovation, networking and education become our main ingredients. The Congress committee has been more determined than ever to create a meaningful and comprehensive programme and a way to bring the world together”.  The Worldchefs Association has a membership of 105 countries and is committed to uniting the global community and cross-industry innovators to explore the past, present, and future of the culinary trade.

The Emirates International Salon Culinaire is the largest single-entry chefs’ competition in the world.
