competition providing young chefs in South Africa an opportunity to showcase
their creative culinary skills and broaden their food horizons!

Peppadew® is a brand that provides a range

deliver endless opportunities to transform menus to be outstanding. Given these

the box, and put forward their best 3 course menu featuring Peppadew® as a basis
for being selected to partake in the final cook-off.

In order to get our young chefs inspired, two
workshops will be held before the entries are due, where the versatility of the
Peppadew® products will be demonstrated. The Top 6 finalists will be selected
based on their menus submitted, and from there the final cook-off will take
place.

This year’s grand prize is an all-expenses
paid trip to the Worldchefs Congress in Kuala Lumpur in July 2018 to attend the
Billy Gallagher Young Chefs Forum: a fantastic opportunity to interact with
Chefs from around the world and gain international culinary exposure!

Emirates and Dilmah celebrate 25 years of exclusive brewing in the sky

As Sri Lanka celebrated the 150th
anniversary of Ceylon Tea in 2017, Emirates marked its 25 year partnership
with Dilmah, the country’s premier tea brand.

 

A collaboration that began in 1992 has resulted
in a select range of 10 types of tea being produced exclusively for Emirates
passengers on flights worldwide, catering to a wide palate of taste and sensory
preferences.

 

More than 9.6 million tea bags made in Sri
Lanka by Dilmah are served on Emirates flights around the world per year. Both
brands have grown exponentially since their collaboration began and today
Emirates, the world’s largest airline by passenger kilometres, takes the Dilmah
brand to more than 150 destinations on six continents.

 

At the top of the airline’s exclusive tea
selection is the Emirates Signature Tea – a single-estate tea made from Flowery
Broken Orange Pekoe 1 leaf growing at an elevation of 1020 meters above sea
level on the Dombagastalawa Estate, in Sri Lanka’s Nawalapitiya region. Made in
the artisanal orthodox style with a sprinkling of marigold and safflower, the
coppery infusion reveals the excellent natural climatic influence on the tea
before the tender shoots were handpicked.

 

“The Emirates Signature Tea is really a very
special tea that we are honoured to have crafted for Emirates passengers,” said
Dilhan C. Fernando, Director at Dilmah. “Our emphasis was on offering
passengers a signature and therefore uniquely Emirates experience in tea, so we
integrated Rose as a defining element of the cultural heritage of Emirates airline,
added Almond to balance the richness of the Rose especially for male guests,
while using an ingredient that symbolises good health and luxury in the Middle
East.  The hint of Ginger has a functional element in restraining the
extravagant aroma and flavour of Rose and Almond while emphasising the natural
goodness that the tea offers – for Ginger, like tea, is potent in its human
health benefits.”

 

The aroma and taste elements in the Emirates
Signature Tea are designed to work in elegant pairing with food, but the tea
can be a dessert in itself.  While savoury dishes with nuts or leafy
vegetables in them work well with the tea, it is also an excellent accompaniment
to most desserts including chocolate, caramel or light cake.

The teas offered to passengers flying with Emirates
are chosen on the basis of the popularity of different types of tea such as
Earl Grey, but also looking at trends and functional expectations such as a
certain intensity of flavour and the need to cater to different preferences
like minty or citrus infusions.

 

In general, black teas are the most popular
among passengers in Economy Class, while passengers in First and Business Class
seem to favour Moroccan Mint and English Breakfast tea. The range available on
each flight is based on the route and configuration of the aircraft, but every
First Class cabin on a long-haul flight offers a choice of 10, from Ceylon
Black Tea, Green Tea, Camomile Infusion, Earl Grey Tea, Moroccan Mint Tea,
Moroccan Mint Green Tea, Brilliant Breakfast Tea, Original Earl Grey Tea,
Sencha Green extra Special, Pure Chamomile Flower Tea and the Emirates
Signature Tea.

 

Emirates commenced operations to Sri Lanka in
April 1986 and operates a total of 35 flights a week from Colombo — 28 flights
westward to Malé and Dubai and seven eastward to Singapore. The airline has
deployed ultra-modern Boeing 777-300 ER aircraft on flights serving Sri Lanka,
offering passengers gourmet regional cuisine and the airline’s award-winning
ice entertainment system with up to 3,000 channels of movies, television
programmes, games, audio books, and music, as well as the famed hospitality of
its multi-national Cabin Crew.

 

Travel with Emirates also earns passengers
Skywards Miles on the airline’s award-winning frequent flyer programme. Accrued

Tea for A Spicy Winter

Dilmah’s chai is fun, it is natural
goodness, it is personal and it redefines milk tea! Chais are especially
magical during Christmas and can be paired with a variety of Christmas Cookies.
Christmas Chais can be taken hot, chilled, infused with herbs, spices, rum,
cognac or gin. In its authentic, natural and fragrant form, Chai is a
combination of ingredients that coalesce harmoniously in tasty balance with the
central element – tea.

How to make the most wonderful chai of
the year:

1.    
Choose your tea – Keep in mind that when
you use milk, condensed milk or a sweetener you’ll need a tea with a strong character
to keep the chai balanced.

2.    
Choose your spice – Anything from ground
spices to zests of citrus fruit! Lemons and limes often find a great partner in
chillis while oranges team up with cardamom or cinnamon in a delicious way.

3.    
Add the tea – Use 2 grams of tea or 1
teabag in 200ml of water. Add the tea and spices into a teapot or plunger.

4.    
Brew the tea – For black tea and herbal
infusions maximum brewing time is 5 minutes, for Oolong teas 3 minutes is
sufficient.

5.    
Strain the tea – Strain the hot tea into
the first chai mug. Sugar, honey, syrup or marmalade, any type of sweetener can
be used.

6.    
Pour the milk – Add the milk into the
second mug.

7.    
Air the tea – Especially when condensed
milk is used “airing” the tea is a key element in the making of the perfect chai.
By throwing the chai from cup to cup you create a foamy top on the drink.
Because of the extra air that is added to the drink the aroma of the spices
comes out stronger and the tea is quickly at drinking temperature. The higher
the throw, the frothier the drink.

40th Anniversary of the erection of the monument of Western Cuisine Birthplace in Japan

AJCA celebrated 40th Anniversary of the creation of the monument of Western Cuisine Birthplace in Japan on 25th October 2017 on a large scale. Monument was built by AJCA in the Thomas Glover’s Residence Garden of Nagasaki-city in Kyushu Island in 1977. More than 100 chefs of AJCA member include President Toshi Utsunomiya, attended this ceremony.

History of western cuisine in Japan started in the middle of 16th century that Portuguese ship came to Tanegashima-island in Kyushu region. Culture of western cuisine grew at Nagasaki-city in Kyushu region, because Nagasaki was only the place opened for foreign country under the national isolation policy at Edo-period. First western cuisine restaurant “JEUTEI” was opened in 1864 by Chef Jyokichi Kusano in Nagasaki-city.

Mr. Thomas Glover was a Scottish trader and came to Japan in the middle of 18th century. After a big success in trading business, he built this luxurious residence in 1863 on the hill facing splendid view point of Nagasaki-city. His residence was registered as a historical world heritage site in July, 2015.

TEA INSPIRATION AT BOURNEMOUTH & POOLE COLLEGE

United Kingdom, JUNE 2017: Bournemouth & Poole College, one of the Worldchefs approved culinary schools in the UK conducted their first tea inspiration course on the 1st of June 2017. Claire Stanton, the Restaurant Instructor of Hospitality & Catering faculty initiated this module and inculcated the knowledge she received during the School of Tea 2017 session in Sri Lanka, to her students.

The Modules taught at the school are as below.

  • History of tea
  • Variety in tea manufacturing  process
  • Terroir of tea
  • Brewing a perfect cup of tea
  • Tea & health
  • Innovations in tea
  • Food pairing
  • Tea Gastronomy
  • Ethics in tea

The modules were well received by the students and they were quite excited to learn about the tea infused cuisine as well as the tea and food pairings. Below are some comments from few of the students who completed the course.

  • Ella – “Really interesting to understand different flavours of tea with different foods”
  • Louis – “Very interesting, learnt a lot to do with tea, thanks a lot”
  • Sian – “Amazing lesson, learnt a huge amount”
  • Jamie – “Really enjoyable, amazing day, tea and food pairing was a highlight and inspiring”

 Thoughts of Claire Stanton about the course:

“The Tea Inspiration course was a great success and the students found it to be both rewarding and enlightening.  This morning one of those students Lina informed me that she's already spread the word about Dilmah Tea with three of her chef colleagues who were all impressed with the quality and story behind the tea. We will be running the course again next year all being well around the same time for the next level 3 graduating Specialised Chefs.”
