Singapore Celebrates International Chefs Day 2014

On the 20th of October 2014 our SATS team organized a luncheon for 150 people in conjunction with the National Kidney Foundation, these people are all on the Dialysis machines, we created a menu with the support of our dietician and also the dietician from the Kidney Foundation, the chefs actually did a little show for all including a few song in English and Cantonese and a not so choreographed dance routine, but everyone enjoyed it.

Due to religious beliefs – we set up two distinct buffets and served by different people and even transported in different vehicles.

A game of bingo in which near everyone won a prize and the chefs served and cleared that tables with the help of many volunteers from our offices including our senior management who all wore a chef’s hat in recognition of International Chefs Day.

This is our company’s 4th year as a company of celebrating International Chefs Days and it is something that all the chefs and the office people look forward to too.

Vanuatu Chefs Celebrate International Chefs Day 2014

Vanuatu Chefs & Food Handlers Association found a perfect way to kick-start its annual Salon Culinaire and honors the International Chefs Day 2014 at the same time.

With a help of Adam Khazaal, Australia’s Young Chefs Club President, VCFH Association was honoured to cut the ribbon and open the very first Vanuatu Young Chefs Club in the country. The entire event was supported by Vanuatu government and Ministers, food industry leaders, national and international Chefs, who are all aware of the importance of back-boning the young generations and providing them with suitable conditions to network, brainstorm and progress.

A wonderful way to commemorate International Chefs Day, acknowledge this year’s “Pass it On” theme and share the news with the rest of the Worldchefs community! Thank you Vanuatu Chefs!

PASS IT ON IN MYANMAR – INTERNATIONAL WORLD CHEFS DAY OCTOBER 2014

International World Chefs Day – Myanmar October 2014,- was a great opportunity to call all together senior and junior chefs, chefs and pastry alliance of Myanmar,- celebrate a day and pass it on. The Young Chefs of Myanmar ( Y-MCA ) lead through the program of the evening which was also a Thank YOU party for all chefs and sponsors, organizer of Myanmar Culinary Arts Challenge ( MCAC ) 2014. With certificate and cash awards to all young Chefs and MCAC committee members,- the ” young chefs ” patrons as Chefs Dominic Mang, Aung Myo Lwin, Thurein Htun and Pastry Aghee took the stage for the program.

Special Thanks were awarded to our sponsors Premium Food Service, Nestle Professional & MAGGI, Fonterra & Anchor, Grandwynn Brothers, Shwe Yin Mar Organic Coffee, IKON Mart, Dagon Beer & Breweries, and organizer Allworld – BES.

The young chefs honored the active senior Chefs of Yangon: Michel Mecca, Istvan Madai, Madhu Pillai, Taing Kyaw, Andrew Vogt, Herman Feigl, Jan Moeller, Ricardo Lujan, Somchai, U Than Lwin, Chris Parsons.

Next to great Myanmar Cuisine from ” MY Garden ” restaurant, all past years activities and documentaries of MCA & Y-MCA charity and culinary work was presented by DVD movies,– So also the future was presented through Hermann Feigl and Fraser Hawkes, they asked and coordinated already commitments and support,- from all Chefs for the 2015 Food & Hotel Myanmar, Myanmar Culinary Arts Challenge 2015 at Myanmar Event Park 3rd to 5th June 2015 in Yangon.

Pass it on also here with more Myanmar chefs taking the lead,– more young Myanmar chefs taking positions and duties,– more Myanmar Chefs are involved in World Chefs Without Borders activities through Chef and WCWB Myanmar Ambassador Thurein Htun

Financed through the World Chefs Without Borders Charity Dinner 17.6.2014 in Yangon, income, the full equipment is delivered and set up with training starts soon,— Pass It On from professionals to young non professionals to ensure good income and an independent live for the young girls and the blind of Myanmar after a 2 years training.

Thank you to Nestle Professional, MAGGI, Fonterra & Anchor for their presents handed out to each chef on the evening, a further step for best cooperation in the growing Myanmar hospitality industry.

A big thank you to Professional Knifes from Friedrich Dick GmbH & Co. KG, for their past weeks commitment to further support with professional knifes to Myanmar young chefs. Young Chefs patron Than Naing Tun will coordinate as past time for the new sponsorship a really great support to ” PASS IT ON ” the next generation in Myanmar.

Fonterra, Anchor and Myanmar Chefs Association & Young Myanmar Chefs Association agreed to start in January a series of ” Pastry & Bakery Master Classes ” – Pass it on, in Yangon which will than with mini competitions lead to a final the ” Fonterra Pastry CUP 2015 at the Food & Hotel Myanmar, Myanmar Culinary Arts Competition 3rd to 5th June 2015 at Myanmar Event Park (MEP) in the center of Yangon near Shwedagon Pagoda.

International Chefs Day 2014: Pass it On video ft. Worldchefs Board members

Anticipating World Food Day and International Chefs Day 2014, Worldchefs Board members created a very special video, underlining the importance of education and most of all – the exchange of different skills, knowledge and professional experience as the key elements for futher growth of the profession. Participating in the Board meeting held in Durban, South Africa, and inspired by this year’s International Chefs Day theme: “Pass it On”, members of the Worldchefs Presidium took a moment to share only a piece of their skills, but a mouth full of wisdom, aimed at inciting Chefs around the world to keep Passing it on!

International Chefs Day 2014 in Taiwan

The 2014 International Chefs Day under the theme “Pass It On” was celebrated with TCA at a licensed approved Disability Community Centre in the remote mountain hills of Li-Shan, Heping‐Tawian which is located at 2050 meters above sea-level. The Smart Centre under its establishment name 103 “Faith-Hope-Love” actively supports the development of childhood from birth to age 6 by providing community support to family members on early child disabilities, physical aid, childhood-adult teaching and family guidance.

Preparing for International Chefs Day with KitchenConnection.Org

Having both – the World Food Day (October 16) and the International Chefs Day (October 20) just around the corner, it could not be a better time for KitchenConnection to have its beta launch of KitchenConnection.org, a global platform that connects foodies around the world with Chefs – both lay and professional, who are willing to share their tips and tricks through live video sessions. What is more, encouraging Chefs to set their knowledge and skills free by sharing them with others, not only on October 20 but at daily bases, Worldchefs was more than glad to backbone the initiative.

The upcoming event, sponsored by Whole Foods Market® Bowery, will take place in New York City on October 21st 2014, when a very special video dedicated to Worldchefs will be recorded. Moreover, inspired by this year’s International Chefs Day theme – Pass It On, Vice President of Maîtres Cuisiniers de France (USA) and distinguished member of the Academie Culinaire de France – Claude Godard, will embody this year’s celebration as he virtually teaches foodies in France how to make delicious hors d’oeuvres on KitchenConnection.

Fortenately, all those who won’t have a chance to attend the event will still be able to have a sneak peak, since the video will soon have its grand premier on the Worldchefs website.

Sharing a common mission to spread knowledge, empower networking at a large scale, and use food as the key element of the gastro diplomacy and its influence to create positive changes, Worldchefs was more than delighted to support the upcoming event, as well as the entire project that stands behind of it – KitchenConnection. Worldchefs without Borders Slovenia Charity Event Report of september 2014

World Chefs without Borders proudly organized the WCWB Gala Dinner on 16th September 2014 at Grand Hotel Toplice, Bled Slovenia for charity fund raising which all committee travel with their own expense. We are honor to have World Chefs (WACS) President Gissur Gudmundsson gracing the event with many VIPs from Bled attending in this prestigious and meaningful gala dinner. With some insightful interviews with on the World Chefs without Borders leadership under Willment Leong and Committee Charity projects, the proceeding go to needy around the globe and local charity group.

Myanmar Chefs Association invited for global WACS standard judging at Htoo Hotels Group – Culinary Hotel Group Competition at Kandawgyi Palace Hotel Yangon

Michel Mecca, Executive Chef at Kandawgyi Palace Hotel Yangon – Myanmar, gave us a call at end of July. His Chairman of Htoo Hotels Company heard well and good about the great success of the Myanmar Culinary Arts Challenge during Food & Hotel Myanmar in June 2014. Specially about the best arranged culinary competition by the Myanmar Chefs Association members. Inspired by the idea he asked his whole F&B and Hotel operation team of over 14 Hotels & Resorts to create an inter Hotel Chain Culinary Challenge , on Myanmar Traditional Cuisine to highlight, upgrade and maintain the quality of Myanmar Cuisine in all Hotels as well motivate his all chefs to create the Hotel Groups signature dishes. Than to further promote the Myanmar Traditional Cuisine signature dishes to promote the Hotel Group as well the richness of Myanmar Cuisine on a global culinary stage.

We quick came together at the Yangon s Kandawgyi Palace Hotel with Chef Michel and the whole organizing committee with Mrs. Shwe Mee, Ma Cherry, Ko Sein Win , Mr. Ho Kau Fai as F&B Group Director ( a former Shangri – La manager ) and many more.

Today morning, 11.9.2014 all was in an excellent – culinary world standard quality set up. From all 14 Aureum Resorts, Treasure Hotels and the special feature Hotels each sent 2 chefs , all in great looking corporate chefs uniforms, aprons with the theme of the day and excellent set up cooking stations for a three course Myanmar Traditional Myanmar menu. Pork Curry was the target and a soup and salad had to be created around also in Myanmar cuisine.

Excellent Cooking Stations – great for future Culinary Events

The cooking stations well to use for an international standard cooking competition, we heard we can use for further food competitions which is already great news for a generation of young chefs in Myanmar where competitions are just becoming very popular and valuable. This makes future big culinary events much more easy to plan in Myanmar.

Hygiene & Food Safety Standards were very high….

Mainly due to the all Hotels managements, Head Chefs and F&B the set up of each team was great from the beginning which resulted in very high hygiene standards and points. One could see clearly that all chefs worked very systematic and judging would focus mainly on the taste, texture and the combination of the three dishes taste.       

At new Lake Side Spa and Japan Restaurant Location

1,5 hours each team of two chefs had for cooking, 30 minutes were given for mise en place, cutting and cleaning at the production kitchen. The Competition took part in the lasts outlet of Kandawgyi Palace Hotel, the new Lake side SPA which will have also a Japanese top dining Restaurant to open soon.

Remember 20 years ago 1995 Myanmar s Tourism birth

Ko Sein Win introduced the event and highlighted the at World Chefs judging criteria again to the young chefs and on the bell was the competition started. Kandawgyi Palace Chefs looked good as they used a Japan Cuisine technique to control the fat of the Myanmar pork well…. by cooking it with a hand of rice first… the result gave them right, also a great charred Eggplant Salad they did and presented well. A dish I had eaten the first time in my live in 1995 exactly at Kandawgyi Palace Hotel back than myself the Executive Chef there with Andreas Vogt and in all Asia well known and legendary Mr. Juergen D. Voss leading the Kandawgyi Palace Hotel than as the first international standard Hotel and Cuisine in Myanmar – the beginning of modern Tourism to Myanmar, just 20 years ago.    

Than the time was up and very systematic and smooth all dishes were set up at the display table with their Hotel names, Chefs as well dishes name cards stand by,– again one must say absolutely professional arranged and easy to see that the great team around Ma Shwe Mee and Ma Cherry with, Mr Ho team & Chef Michel did a lot of thoughts to details.

The 5 Judges including 2 WACS approved and experienced culinary judges of MCA, a veteran and top specialist of Myanmar Cuisine U Ohn which is the owner of one of the best Myanmar Traditional Cuisine Restaurants in Myanmar and Ma Cherry and Groups Vice Chairman U Taw started the tour of 14 team, 42 dishes taste and texture but also product knowledge. Very hard to say as all chefs did a great job, one was better at the soup another team better at the salad and so many balanced out each other. Important to say no “MSG” Mono Sodium Glutamate was allowed to use as the organizing team stated to right Myanmar has best quality food products – no need for artificial taste enhancer.    

While everyone was busy counting together it became clear that the vast majority of judges had voted one Hotel as top winner and three more as runner up,- where by exact calculations the third award stood vacant as two hotels reached second place with same results.

A great signature dish for all Myanmar,- Acacia Leave Soup based on smoked Catfish

1st Prize and winner went to ” Nay Pyi Taw – Aureum Palace Chefs “

–  A great Acacia Leave Soup based on smoked Catfish – excellent full body flavor
–  A very good Marrow Leaves Salad, smooth and very balanced seasoned
–  A Red Pork Curry, very well cooked and at best taste
 
A 500 $ US bonus, two Gold Medals and the Award Trophy was welcomed by the Chefs

Culinary Debriefing by culinary specialist U Ohn…..

U Ohn the specialist in Myanmar Traditional Cuisine gave the important and at WACS – World Chefs required debriefing to all Chefs,- as well hints and tips for future competitions to the young chefs,- for sure all great winner. After the group picture with all chefs, judges and committee – all participating Chefs were invited to one of the fine dining restaurants at the Kandawgyi Palace Hotel – Yangon for lunch.  

Needless to say that here once again the Htoo Company of Hotels has jet again in Myanmar Tourism & Hospitality Industry set new standards,- here guiding for quality improvement through encouragement, incentives as culinary competitions for all staff of the group, – with a state of the art organization and set up of the whole competition, – best done without any other equipment provider, – excellent job we must say and future vision ,- hopeful we will see some of the many other Myanmar owned and managed Hotel & restaurant groups taking a look into such staff motivating and educating open eyes events and boost more Myanmar Chefs through culinary competitions and seeing what the other can do and I can learn 

Thank you in the name of all chefs in Myanmar – a true motivator to be a Chef in Myanmar,– to be a chef at a hotel of Htoo Group like Kandawgyi Palace Hotel, Aureum Palace Hotels & Resorts, or Myanmar Treasure Hotels.
