Singapore Chefs’ Association Wins Bid to host Worldchefs Congress & Expo 2024

The highly anticipated international event will welcome professional chefs from over 100 countries
Singapore · 31 August, 2020 –  The Singapore Chefs’ Association is proud to announce Singapore is the official country to host the Worldchefs Congress & Expo 2024. 
The bi-annual international event for professional chefs will bring together over 1000 delegates and professionals from across the five continents to network and expand their professional bonds. The unique program delivers presentations and workshops from leading experts in the industry, impactful educational programs including the Worldchefs Educators’ Forum, specialised events designed to uplift the next generation of chefs such as the Bill Gallagher Young Chefs Forum, the Global Chefs Challenge culinary competition, an international trade exhibition, and diverse activities to enhance both personal and professional networks.
Since 1928, Worldchefs Congress & Expo has united a global community of chefs and cross-industry innovators to explore the past, present, and future of the culinary trade. The biennial event is a hallmark tradition of Worldchefs with an institutional, cultural and economic interest. It has been organised in 38 cities around the world throughout its illustrious 90-year history.
In the finals, Singapore beat Wales to secure the bid with 40 votes (against 36 votes). 
Says Chef Eric Neo, President of the Singapore Chefs’ Association, “This is a milestone for the Singapore Chefs’ Association and credit goes to the Singapore Congress Bid Committee who relentlessly pursued excellence and the support of the Singapore Tourism Board. Singapore was the first country in Asia to host the Worldchefs Congress in 1990 and it made history. Since then, Singapore has changed so much, especially in the world of food & beverage. We believe we have a lot to offer the world of chefs with our culinary scene and heritage, and we cannot wait to show them what we have.

As Tea Growers, Dilmah Tea was founded on the knowledge of its enduring connection to the land (Sri Lanka) and the surrounding communities in which it operates. Dilmah Conservation is a symbol of Dilmah’s comprehensive commitment to minimizing its impact on the planet, to fostering respect for the environment and ensuring its protection by encouraging a harmonious co-existence of man and nature and the sustainable use of the environment.

On International Bee Day 2020, Dilmah Conservation launched ‘Bee a Keeper: Sustainable Apiculture for the Conservation of Bees’, an initiative that now functions through six identified hubs across Sri Lanka. This project aims to raise awareness on the value of sustainable beekeeping, evaluate the present status of wild bee populations, study the chemistry of honey variants and create replicable beekeeping models to uplift communities and improve livelihoods.  

With a decline in bee populations, there has been a surge of research focusing on the drivers of bee decline and the impacts on provisioning ecosystem services. The One Earth Centre for Climate Change Research by Dilmah Conservation functions as the project’s research hub. The research done includes wild bee surveys, to collate the effects of habitat loss, pesticide use, the proliferation of parasites, availability and diversity of forage, and the effects of climate change on bee populations in Sri Lanka.

Historical Online General Meeting for 92nd Year of Worldchefs

 

PARIS August 17, 2020 A monumental and historic event occurred on Saturday August 15, 2020 when the World Association of Chefs Societies (Worldchefs) www.worldchefs.org held the 1st Online General Meeting during its 92nd Anniversary.

 

Presiding over the Online General Meeting was Worldchefs President Thomas Gugler with 150 online panelists and attendees including the Board of Directors, Committee Chairs, National Society Member Presidents, Affiliate Members, Associate Members and Observers from over 120 countries with varying time zones spanning the entire globe. The Sergeant of Arms for the meeting was Neil Abrahams, Continental Director of the Pacific Rim.

 

Highlights of the Online General Meeting included the ratification and welcoming of 5 New National Society Members into the Worldchefs family: Albanian Chefs & Cooks Association; Asociacion de Chefs de El Salvador; Kuwait Chef Club; Association of Professional Chefs Nigeria and Spanish Selection Association of Professional Cuisine.

 

The two finalists bidding to host the 2024 Worldchefs Congress, Singapore Chefs Association and Culinary Association of Wales provided spectacular online presentations. By a very close margin and winning the bid was the Singapore Chefs Association. Congratulations from Worldchefs to the winners and we look forward to coming to Singapore in 2024!

 

Worldchefs President Thomas Gugler announced as runner up, the Culinary Association of Wales will have the opportunity to host a prestigious Worldchefs Competition. It was later determined this new international team competition would showcase culinary skills, inclusion and opportunity. Congratulations to Wales for their incredible bid efforts and Worldchefs looks forward to finalizing the competition details with you.

 

In reply to the plea by Worldchefs President Thomas Gugler, National Society Members approved by majority vote, granting the Russian Culinary Association the opportunity to host the 2026 Worldchefs Congress due to the cancellation of the 2020 Worldchefs Congress as a result of the global pandemic caused by COVID-19. Worldchefs is proud of its members for their compassion and understanding as we all look forward to going to Russia in 2026!

 

Managing Director Ragnar Fridriksson provided an overview of Worldchefs Activities, financial and budget review and details previously circulated to the Members. World Chefs Without Borders Chairman Willment Leong and Honorary Life Member Committee Chairman Murray Dick also shared insights and details of their Committees.

In his Closing Remarks, Worldchefs President Thomas Gugler thanked all the members for their confidence and trust in supporting his presidency and the entire Presidium for another 4 years.  He also thanked the Board of Directors, Committees, Corporate Partners and Head Office team for all their efforts, support and contributions to Worldchefs.

 

Before the Closing of the Online General Meeting, Andy Cuthbert, Continental Director of Africa and The Middle East invited everyone on behalf of Emirates Culinary Guild to attend the 2022 Worldchefs Congress in Abu Dhabi, followed by the official ringing of the Congress bell.

 

Throughout the Online General Meeting, participants had the opportunity to ask questions to the Board of Directors through a chat box followed by a 30 Minute Open Forum.

 

Worldchefs would like to thank Linh To and Andreea Mocanu from the Worldchefs Head Office for all their efforts towards making the 1st Online General Meeting such an outstanding success!

Mourning the Loss of Chef Claudio Ferrer

Naples, Florida: 3 August 2020 – It is with great sadness that we mourn the loss of Chef Claudio Ferrer.

As a Chef, Educator, Judge and Worldchefs Continental Director of the Americas, Claudio inspired chefs and culinary students around the globe with his kindness, mentorship, support and humor. He was a great friend to all, a proud family man and an accomplished Chef.  

Chef Claudio was well known for his big heart and passionate dedication to Worldchefs, the American Culinary Federation and Culinary Arts. He was devoted to preserving and promoting Latin American culture, its authentic flavours and heritage cuisines, and most of all its people.  

Worldchefs would like to convey our sincerest condolences to Claudio’s family and may we all find warmth and comfort in the wonderful memories shared together throughout the years.

Fried Eggplant, Tomatoes & Salted Egg Salad with Calamansi Twist by Dennis Lorenzo

Message from the Chef

Ingredients

  • 3 medium eggplants
  • 3 medium size tomatoes
  • 3 salted eggs or hard boiled eggs
  • 3 tablespoon olive oil for frying
  • For the sauce:
  • 3 tablespoons soy sauce
  • 3 tablespoons calamansi juice
  • 1 tablespoon brown sugar
  • Half teaspoon sesame oil
  • Minced garlic
  • Finely chopped onion

Instructions

Cook Time: 5 to 10 minutes

Crossly cut the eggplant into 2 parts removing the top tag and the bottom part. Slice thinly and soaked it in a bowl of tap water to prevent the eggplant slices from discoloration.

Heat a non stick pan and pour into it a 3 spoons of olive oil and fry eggplant slices until lightly brown. Set aside.

In a similar pan, sauté the minced garlic and finely chopped onion until aroma begins to leak. Set aside the garlic and onion together with the excess olive oil.

Cut tomatoes and remove seeds and chop it according to your desire size. Set aside.

Remove shells of the salted or hard boiled eggs and chop it according to your desire sizes. Set aside.

Using a mixing bowl. Combine fried eggplant, chopped tomatoes and diced eggs. Mixed gently and side aside.

Using a small mixing bowl. Mixed the soy sauce, calamansi juice, garlic and onion with olive oil, mix it well and lastly, add the 1tablespoon sugar. Blend well.

Pour the sauce mixtures to the mixed eggplant, tomatoes and eggs. Mix gently.

Arrange in a bowl.

Serve it with a freshly grilled chicken or grilled salmon.

Dilmah School of Tea e-Learning is a Worldchefs accredited programme that seeks to inspire passion in tea, through knowledge of the artisanal aspects of tea.
