Healthy Food for Growing Up – CAP and COTHM on the move in Pakistan

Chefs
Association of Pakistan (CAP)
  in
association with COTHM Pakistan and Dubai continues its drive to add value to
the culinary traditions in line with WorldChefs vision and mission.

2018 activities on culinary preparations and knowledge-sharing were launched
with ‘little chefs’ competitions at COTHM.

The theme of ‘little
chefs’ competitions described as “Healthy Food for Growing UP”
received tremendous applause from the education sector as well as form the
hospitality industry. Two hundred kids between the age bracket of 07 and 13
form fifteen schools were selected to participate in the pre-ICD 2018
activities. The children were not just engaged for their learning through
culinary competitions but they were also motivated and inspired by the
professional mentors to develop them into confident individuals. A special
component of food safety and hygiene was also incorporated to their learning
activities, which helped them to understand the significance of food safety and
hygiene in the food and culinary preparations at home and in commercial
operations.

A new toolkit for sustainable eating

Today on
World Food Day, the Electrolux Food Foundation, the student organisation AIESEC
and Worldchefs announced that they commit to raise awareness about food waste
by teaching 30,000 children on sustainable eating by 2019. The education
program is based on a newly launched education toolkit that contributes to the
UN Sustainable Development Goals on responsible consumption and production.

Earlier
this year,
Electrolux Food Foundation, AIESEC and Worldchefs developed a
joint lesson plan to inspire children to challenge and change their own food
habits. The toolkit is developed through the UN initiative World’s Largest Lesson,
produced by Project Everyone in partnership with UNICEF. World’s largest Lesson
aims to introduce the UN Sustainable Development Goals to children and youth.

“One third of the food produced goes to waste while 800 million
people in the world go to bed hungry. By engaging younger generations on these
topics, we can help shape a more sustainable future,” said Malin Ekefalk,
Director of Social Responsibility at Electrolux.

A pilot phase of the project was kicked off in July-September,
reaching already 2,000 children in Malaysia, Argentina, the US and Poland.
During the upcoming year, the project will gear up and AIESEC’s volunteers and
Worldchefs members will join Electrolux employees in delivering the workshops
in order to be able to educate 30,000 children.

The educational toolkit on sustainable eating is available for all
and can be downloaded here:  http://cdn.worldslargestlesson.globalgoals.org/2018/07/Food-Heroes-Workshop_FINAL.pdf

What is International Chefs Day?

Introduced in 2004 by the very well esteemed Dr. Bill Gallagher, who was the incumbent President of the World Association of Chefs Societies, The International Chefs day is focused on “the power of the chefs’ jacket” – where chefs will get together to give back to the community, use the chance to advance the career of chefs and help change their local communities.

Each year, Worldchefs partners with Nestlé Professional to create different themes to help broadcast their mission.

This year, with the theme “Healthy Foods for Growing Up”,we want to encourage kids to think about what they would like to be when they grow up, and how eating healthy can get them there. The global community of chefs can make this positive influence!

International Chefs Day came to Tokyo

All Japan Chefs Association (AJCA) celebrated
the International Chefs Day 2018 on 2nd October 2018 with” the theme
of Healthy Foods for Growing up” together with 54 sixth grade students of
Fujimi Elementary School in Tokyo and 12 chefs of AJCA members
including President Toshi and Vice
President Kihachi Kumagai.

After the cooking demonstration done by
Chef Kumagai, children washed hands first and started to cook 3 dishes which
were Cold Japanese Pear Soup, Japanese Traditional Pork Cutlet Sandwich and Smoked
Crabmeat and Healthy Vegetables Salad California Style.

Children dressed in chef’s hat and apron,
presented by Nesle Professional, were preparing delicious foods under chef’s
professional instruction. They were interested in how to use knife safely, to
sieve soup properly and so on. Chefs were happy to see that they worked hard, actively
and eagerly more than they expected.

Dishes were completed on schedule, then
they enjoyed their foods at the table covered with white table cloth in good
eating manner together with chefs.

It was a very exciting and fun for not only
children but also for chefs.

World Heritage Cuisine Summit @ Food Festival

The World Heritage Cuisine Summit & Food Festival is taking place in Punjab, India from October 12 to 14, 2018

Chefs have the power to create a new global conversation about food and translate the SDG’s into accessible everyday actions

Chefs bridge the gap between farm & fork – influencing what we grow, what what we put on our plates and how we thing and talk about food. If Chefs take a lead on sustainability issue – such tackling food waste and sustainable sourcing – diners, farmers, business and even government will follow. Through their networks chefs have the power to curate a new global conversation about food and translate the United Nations Sustainable Development Goals (SDGs or Global Goals) into accessible, everyday actions in our kitchens, classrooms and communities.

Afternoon Tea for the 21st Century; Re-engineering 18th Century Real High Tea

Afternoon Tea for the 21st Century is an evolution of Dilmah’s 8 year
journey with the ‘Real High Tea Challenge’. Because Afternoon Tea is not just
about tea with scones and cucumber sandwiches, there are several dimensions to
it. And whilst ultimately the objective is to present great taste, to present
goodness in terms of the wellness aspects in tea, but also purpose in terms of
doing something that impacts on the lives of someone else.

The Cultural Dimension

Afternoon Tea for the 21st Century shall be governed by
specific cultural attributes, emphasizing local tradition, cultural and
historical heritage in order to add that dimension to the guest experience.

The Personal Dimension

A key element that would enhance the experience of afternoon tea for guests is
the authenticity and individuality in the teas, paired foods and so on. A
personal element could involve a family tradition or a recipe from that has been
passed down.

The Culinary Dimension

Excellence in the quality of ingredients, technique and the
outcome of all sensory aspects are required.

The Mixology Dimension

Excellence in the selection of spirits and their combination
is a must in creating the perfect experience.

The Sustainability Dimension

Ingredients, techniques and all aspects of the preparation and presentation of
Afternoon Tea for the 21st Century must be aligned to environmental, economic
and social priorities, ensuring that choice of ingredients, culinary techniques
do not in any way compromise any of these elements or the interests and
aspiration of the guest.

Tea Dimension

The selection and presentation of teas must be made with knowledge of the
specific terroir, perfect preparation and service, with clear expression of the
terroir of each. Respect for the teas and their specific characteristics in
relation to their appearance, aroma, taste and texture needs to be maintained
for the service of tea in any form, even when used as an ingredient.

Harmony

The 7th dimension is the combination of the cultural, personal, culinary,
mixology, sustainability and tea dimension which need to be harmonious with the
other in order that the tea maintains a harmonious combination with food, or
the beverage with which it is served.
