The success of Koppert Cress is entirely dependent on its recognition and acceptance by the professional user. Flavour is the top priority in this regard, but there’s more to it than just taste. Rob Baan realized at an early stage that healthy eating will play an increasingly important role and that we will be involved in this more and more. The company has opted for the vision ‘Good nutrition is crucial for a healthy life’.
We have recently introduced sweet peeper! Sweet peeper goes perfectly with both hot and cold dishes such as soups and salads. It takes dishes to the next level thanks to its high creative value and good bite in combination with the long-lasting, simple, dry, and bittersweet taste. The yellow leaves and pink/red shoots add an extra dimension to the dish while giving a nod to its origin: the sweet potato. In addition to the leaf, you can also use the pickled shoots as a fine addition to salads and sandwiches.
Another new product is cuzco leaves! Cuzco leaves is a leaf with cucumber taste. When used raw it is a visually attractive ingredient. It makes rich dishes taste fresher and lighter. Use (part of) the leaves, as the stem may be too strong in taste. Use the leaves in cocktails, with fat fish, tuna tartare, steak tartare and vegetable dishes. Combine with avocado, citrus, fermented vegetables, smoked and dried dishes, cheese. In combination with fatty ingredients the flavour is nuttier.
On the 20th of November we officially launched the completely new Koppert Cress website and the company’s new visual identity. The newly developed online platform fits in current website expectations and provides a complete new experience with ease of use, extensive travel stories and a configurator that, based on hundreds of criteria, helps to make the correct ingredient choices.

Children around the world had a chance to spend time with Worldchefs members, like yourself, this year on and around October 20th to celebrate International Chefs Day 2019. With the theme “How Healthy Food Works,” provided by our sponsor Nestlé Professional, all were able to print materials from the toolkit including recipes, badges, certificates, games, and even placemats to make your event complete and with ease.
Chef Dr. Bill Gallagher, founder of International Chefs Day in 2004, would be so proud of this year’s efforts as you continued his vision of celebrating our noble profession and passing on our knowledge and culinary skills to the next generation with a sense of pride and commitment to the future.

After months of hard work, world class training and nail biting anticipation, the team that will represent Sri Lanka at the world’s most prestigious culinary competition has been selected. The Fortress Resort and Spa, Galle were titled Gold winners of Bocuse d’Or Sri Lanka. These culinary ambassadors will now take forth the best of our island’s ingredients including Ceylon’s finest tea to create authentic culinary masterpieces at the Bocuse d’Or Asia Finals.
Bocuse d’Or Sri Lanka together with Dilmah Tea have been moulding culinary ambassadors for Sri Lanka since its inception in 2010. Established to uplift Sri Lanka’s culinary standards and create culinary ambassadors that could earn international accolades for their skill and passion, this year 22 teams battled it for the coveted opportunity to represent Sri Lanka.

Worldchefs will bring an Italian beer to the table for the first time
The World Association of Chefs Societies has chosen Birra Morena as a travel companion, an exclusive collaboration with the aim of promoting, in the next few years, the association of food with beer worldwide.
Worldchefs is a worldwide network of chef associations, founded in Paris in October 1928, which currently includes around 110 associations, representing many nations, and millions of chefs.
Birra Morena, already an exclusive partner of the Italian National Cooks, is an Italian brewery that has invested time and resources in high quality projects. Over the past 3 years it has won over 50 medals internationally, including 2 World titles at the World Beer Awards in London: its Celtica Sweet Stout won the title of best beer in the world in its category, a title already won in 2017.
An Italian beer, therefore, is the official beer of Worldchefs and of all the activities that will be promoted around the world where the correct combination of food and beer will be the protagonist.

proudly celebrated their accreditation to the apex body for chefs in the world,
World Association of Chefs Societies, on the 8th of November 2019.
The World Association of Chefs Societies, known as Worldchefs, is a non-political
professional organization, dedicated to maintaining and improving the culinary
standards of global cuisines. It accomplishes these goals through education,
training and professional development through their international membership. As an
authority and opinion leader on food, Worldchefs represents a global voice on
all issues related to the culinary profession. It was founded in1928 at the
Sorbonne in Paris with the venerable August Escoffier as the first Honorary
President. Worldchefs is a dynamic global network of more than 100 chefs’ associations representing
chefs at all levels and across all specialities worldwide.
Earlier this year the Welcomgroup Graduate
School of Hotel Administration, as a part of this accreditation process, was audited
and enrolled as a member of Indian federation of culinary associations (IFCA).
The Indian Federation of Culinary
Associations is a nodal body of culinary professionals in India and is an
independent, apolitical, non-religious and voluntary organization of culinary professionals
was formed with the idea of developing the culinary profession and to showcase
Indian cuisine on the global platform. IFCA hopes to promote culinary knowledge
and propagate various kinds of food and bring obscure culinary styles and
practices to the forefront.
The celebration was graced by the top
leadership of Manipal Academy of Higher Education (MAHE), Manipal. The welcome
address was provided by Principal Chef K Thirugnanasambantham who welcomed the gathering and said the process started nine months back: “There was an intense
audit process. We had lots of work to do. Team WGSHA stuck together and worked
hard. Finally, we achieved the IFCA accreditation last month. The Worldchefs accreditation then followed this. It is a testament to the high standards of
quality culinary education provided here at WGSHA. Besides national and
international rankings, Worldchefs accreditation is yet another feather added to
WGSHA’s crown. It gives us global visibility.”
The chief guest Dr H. Vinod Bhat,
Vice-Chancellor Manipal academy of higher education (MAHE) provided an
inspiring and thought-provoking message. He made the gathering aware of the
prestige attached to the accreditations they had received; how it opened the door
to many more opportunities and how the journey to greater heights was just
beginning. He ended his speech on a light-hearted note saying, “WGSHA unlike
others, is the only institution where any meeting begins and ends with a meal.”
The event was brought to a crescendo with a ceremonious cutting of the cake and
applause from the gathering of student chefs, distinguished guests and faculty
of Welcomgroup Graduate School of Hotel Administration.
