Meet Your Seminar Instructor:

This seminar is taught by: Rick Stephen

Rick Stephen is a third-generation chef from Tasmania, the food capital of Australia. He is the first Australian to be awarded the title of ‘Certified Master Chef’. Rick began his apprenticeship in 1972 under the world-renowned chef Claudio Magris in Melbourne.

He owned and ran Raphael’s restaurant in Brisbane for 12 years, achieving 3 Chefs Hats, the highest restaurant rating in Australia. In 2009, Rick joined SATS Ltd in Singapore as Executive Chef, managing up to 60,000 meals per day for Singapore Airlines. He was promoted to Director of Kitchens in 2015, overseeing all SATS kitchens in Asia, producing a total of 400,000 meals per day.

Rick is also the Continental Director for Worldchefs in Asia, frequently traveling to conduct training sessions and motivational presentations. He has been honored in several countries, and a wing of the NingBo Culinary School in China is named after him: the Rick Stephen’s Centre of Excellence.

2025 Hotelex China Inheritance and Innovation Chinese Cuisine Challenge

The 33rd HOTELEX 2025 Shanghai International Hotel and Catering Industry Expo will be grandly held from March 30th to April 2nd, 2025 at the Puxi Hongqiao @ National Convention and Exhibition Center in Shanghai! Covering popular sectors such as catering equipment, desktop supplies, food and beverage, coffee and tea drinks, baked ice cream, light meals and fine wine, food machinery, food and catering packaging and machinery, chain franchising, etc., creating a more open and efficient communication space for global hotel and catering industry practitioners.

“Shi Ji Xing” International Top Chef Innovation Competition 2024

“Shi Ji Xing” International Top Chef Innovation Competition 2024 is hosted by Shenzhen Food Fair. It aims to provide a platform for chefs to communicate with each other, spread experience, inspire creativity, promote the world catering culture, and produce safe, fresh, rich and delicious dishes.

This competition takes place during the 2024 Global High-end Food and Quality Agricultural Products (Shenzhen) Expo, an exhibition to discover new suppliers and market development trends.

Starting on December 7,2024 in Shenzhen Convention and Exhibition Center (Futian), this event invites world famous chefs of Chinese and Western food. There are 24 famous Chinese and foreign chefs and 6 international judges, making for a veritable world cooking competition. The competition will combine selected ingredients, cooking techniques, craftsmanship and art.

Dr. Rick Stephen has been instrumental in the growth of the culinary profession. Having once an active presence in the competition arena winning many awards and accolades, he has offered guidance and support which contributes to the success of a number of chefs doing well in many competitions and in the culinary profession in Singapore, Fiji, Indonesia, Japan, Taiwan, Malaysia, China and Australia.

Dr. Stephen was elected as the Continental Director for Asia in May 2011 under the World Association of Chefs’ Societies (Worldchefs) banner covering 21 Countries. As part of the Worldchefs Congress Committee, he organized and ran the IFK competition in Korea, and did all the final preparation for the World Finals of the Global Chef and Hans Bueschkens competition since 2008. In continuing his efforts to improve the industry and as part of his Worldchefs involvement in the region, Dr. Stephen has conducted Worldcehfs approved courses and has been an instigator in training and working with young chefs.

2024 National Western Cuisine Cooking Competition

The China Cuisine Association will host a high-level large-scale international western food competition certified by the Worldchefs (World Association of Chefs Societies), inviting western food professionals from around the world and the country to participate. The competition will be held on October 25 and 26,2024, and the award the awards ceremony will take place on the morning of October 27,2024.

The competition covers: Meat Main Course , Seafood Western Main Course, Plate Appetizers Course, Tapas/ Finger Food, Western Soup, Desserts Class a total of six projects, each project according to the international competition rules and requirements for gold, silver, bronze and the championship award, competition certificate provided by the China Cuisine Association and Worldchefs. With more than 400 players and 10 judges in international competitions, it is a veritable international western food A-class competition.

The 25th FHC China International Culinary Arts Competition

The 25th FHC China International Culinary Arts Competition

The FHC Shanghai International Culinary Championships is an invitational competition for a team of chefs. This competition has invited a total of 4 teams from China, South Korea, Australia, and Italy. The participating team is required to cook a set meal banquet for 12 people within a limited time. The winning team will receive the 2024 FHC Shanghai International Culinary Championships trophy.

This competition has been successfully held at FHC Shanghai Global Food Trade Show for 24 times. Its purpose to cultivate young chefs and strengthen the development of Chinese Western food. This also means that this competition has become a highly valuable international cooking competition.

The FHC International Western Culinary Challenge, FHC International Chinese Culinary Challenge, FHC International Western Pastry Challenge, and FHC International Western Baking Challenge are part of the FHC China International Culinary Art Competition. They are judged according to the rules of Worldchefs and awarded certificates and medals certified by Worldchefs.
