The Emirates Culinary Guild would like to announce the successful running of the La Cusine Du Sial 2019 from 9th December 2019 till 11th December 2019. The competition was held at the Abu Dhabi National Convention Centre during La Sial and was the 10th Anniversary of the La Sila exhibition. The competition saw over 425 competitors from the United Arab Emirates, South Korea and Azerbaijan compete in 29 classes across all disciplines of the Culinary Arts, from Ice Carving, Practical cookery, static displays, Emirati cuisine, cake decorating and Show Piece categories. 

20 International Judges from all over the World came to judge alongside 10 UAE based judges during the Culinary spectacular this year. The La Sial is the 2nd largest culinary competition in Africa and Middle East region and is endorsed by the World Association of Chefs Societies. 

“The standards were extremely high this year,” said President of the Judges Chef Otto Weibel who has been coming to the ECG competitions since 1993, and all 10 editions of La Sial, President of the Guild Chef Uwe Micheel Director of Kitchens at Radisson Bleu Deira Creek said “we are proud to be able to have been involved for the past 10 years with this competition and we thank Mr Saeed Al Mansoori Executive Director of IDEX for his commitment and support to be able to put on such a great competition.” La Cuisine du Sial really shows the talents of our chefs here in the UAE and also gives a great opportunity for international competitors to come and compete alongside our UAE chefs. 

Guild Chairman Andy Cuthbert, General Manager of Jumeirah Creekside Hotel, and Madinat Jumeirah Conference & Incentives and Jumeirah Hospitality, added “this year was another excellent performance by our chefs and we were thrilled to be involved with the 10th anniversary of this event.”

This years event saw the return of the Arabian feast class as an edible buffet where three teams presented a traditional Arabian feast that was enjoyed by sponsors and visitors to La Sial and was a showcase of Emirati cuisine.

Daw Ohnmar, owner of some of the best and top culinary standard hotels at Rakhine’s Ngapali Beach Front, The Best in Myanmar (Sandoway Resport, Art of Sands, Residence Ngapali Beach) offered WorldChefs Without Borders, Myanmar’s support with free meals to all patients, Drs, OPT, and ward nurses from the charity free of charge, and medical operations by German & Myanmar Interplast specialist Drs (cleft lips, pallets, mobilizing old burn scars & soft tumors).

CSR Daw Ohmar and her Myanmar head Chef Aung Chit Oo provided, with the help of all their Hotel staff, the healthiest three course Rakhine Cuisine menu, composed of chicken curry, veggie-potato, rice, and soup. There was enough for over 100 patients and family members at Thandwe District Hospital and because it was soon to be Christmas and the third Advent, delicious cakes and cookies were given to everyone.

Rakhine – Myanmar Chefs Association members joined the happy donation as Chefs Social Responsibilities for Rakhine people at the Thandwe hospital. Over 50 Rakhine Chefs next to the all Sandoway Hotel groups chefs and staff helped to portion and deliver the food in paper cups – ZERO Plastic due to Sandoway’s & Rakhine Chefs daily policy. Thank you Chef Mya Win and members.

All patients were happy of the very rich Rakhine Cuisine donation, many patients do not usually have a full meal a day and came from as far as North Rakhines: Rathetaung, Ponnakyune, Kyaukphyu, Ann Cities, traveling through war zones, in order to not miss the once in a life time chance of “normal eating.” “I used my hands, fingers and arms for the first time again after 20 years,” trapped with burn scars I got as baby, and the Myanmar medical system still overlooks such people and until the past weeks no one followed up to help to cure me and get back to a normal life.

Here in an outstanding effort, the Union of Myanmar’s Health Minister & Ministry reached out to all the past year’s burn cases in the villages in Rakhine as well Magway State with Magway, reaching over 90 old burn patients for Dr Peter Sieg,– in Rakhine this time over 20 burn cases for the Dr Heinz Schoeneich – both German Interplast & Myanmar specialist Drs teams. A great effort and success which need to be followed up and become a priority standard procedure and task. :” .. a disabled by burns COST Money livelong,- and operated and remobilized patient MAKES Money livelong …. ” – That should be motivation enough to put more energy in “Re Mobilization of all old Burn Scare patients as well Myanmar’s many, so,  daily War Victims… “

To kick off the IKA/Culinary Olympics 2020, Worldchefs has announced that two Competition Seminars will held at the event. This year, chefs will have the chance to join both a Fruit & Vegetable Carving and/or a Culinary Arts & Hot Kitchen Competition Seminar. 

Competition Seminar instructors share techniques from both the perspective of Worldchefs Certified Judges and award winning competitors. Participants gain understanding of not only judging criteria, but also best practices in the competition kitchen and tactics from teams that consistently reach the highest place at the podium.


Judges: Why attend?

Keep up to date with culinary trends, and discover all the latest rules necessary to provide fair judgment during competition events.

Engage with renowned chef instructors and network with a diverse and driven class of competition chefs, aspiring judges, and influencers in the culinary space.

Current judges: All Worldchefs Certified Judges are required to attend a Competition Seminar every five years. 

Future judges: Take the first step towards becoming a Worldchefs Certified Judge. Participants receive a certificate of participation after attending a Competition Seminar. This certificate of completion is one of the mandatory requirements when submitting a Worldchefs Certified Judge application.

Attending applicable Competition Seminars is one part of the process to become a judge, and does not automatically qualify you as a Certified Judge. Applicants must fulfil additional criteria and provide evidence of support in a formal application process. 'Like A Chef' in Ukraine hosts first graduation

Recently, Worldchefs, along with partners Electrolux Food Foundation and AIESEC, extended the ‘Like a Chef’ culinary training to four more countries. This program focuses on sustainable cooking and will equip unemployed people, such as orphans and women, with necessary culinary workplace skills. The trainings launched in Sweden, Poland, Ukraine, and Egypt in October. This December, Ukraine witnessed it’s first Like A Chef graduation in Ukraine.

“Last week we had already graduation event of project. In this first wave of project we involved students 13-21 years, who are from orphanages or adopted children. Children’s Affairs Service of Kyiv region supported this project and satisfied a lot. They are looking forward to start next waves of project in next year to involve students. Also 8 social media influencers and 1 media partner showcased project and supported children during lessons to believe in their own power.

I am happy to tell you that we graduated 14 children during this wave! All of them were super enthusiastic and excited each day of project as for them it was opportunity to gain relevant skills, socialize and to feel that someone really care about their future. It’s sad to say, but some of them even didn’t know how to cut vegetables in the first day of project, but in the end on exam all of them looked very confident on kitchen and cooked on very good level. On graduation event some children cried as this project became essential part of life and they were upset that it went to the end.

Instructors in Cookery school by Eugeniy Chernukha also enjoyed the process and said that it was easier to work with children than with adults as they were ready to learn and try new things.

We are grateful for all partners and support that we got during realization of project and can’t wait that we can continue to realize this project next year with bigger outcome and impact!”

Worldchefs will bring an Italian beer to the table for the first time

The World Association of Chefs Societies has chosen Birra Morena as a travel companion, an exclusive collaboration with the aim of promoting, in the next few years, the association of food with beer worldwide. 

Worldchefs is a worldwide network of chef associations, founded in Paris in October 1928, which currently includes around 110 associations, representing many nations, and millions of chefs.

Birra Morena, already an exclusive partner of the Italian National Cooks, is an Italian brewery that has invested time and resources in high quality projects. With the purpose of promoting and stretching out the culinary traditions of Italy in our country, The Embassy of Italy organised the World Week of Italian Cuisine in New Delhi. This year, the 4th edition of the World Week of Italian Cuisine was held from November 20th to 24th, 2019.

The theme of the coveted event was “Zero Waste Cooking”, which was thought to be relevant in the current times when we are facing scarcity of natural resources. The high-profile, week-long event saw special guests flowing in from Italy as well. Both the countries of Italy and India came together on a single platform to share experiences, journeys and work on many culinary initiatives.

The event started off with the Italian delegation of ALMA students (the International School of Italian Cookery), led by Chef Andrea Ruisi, meeting their peers from the International Institute of Culinary Arts (IICA) in New Delhi. The teams bonded over some exciting team work activities that included exchanging recipes and experiences on how to manage food waste in the kitchen.

On the second day i.e. November 21st, “Zero-Waste Cooking, The Talk”, was held at the Italian Institute of Culture. Some leading experts from the food industry participated in the conference and shared their views and suggestions on food security and on the ‘zero waste approach’. The list of dignitaries had some big names like Chef Cristina Bowerman (Michelin Star from Glass Hostaria), Chef Anahita Dhondy (founder of SodaBottleOpenerWala), Chef Ritu Dalmia (Diva Restaurants), Chef Andrea Ruisi (Alma), Mr. Arjun Datta (IICA), Mr. Ankit Kawatra (Zomato Feeding India), moderated by Mr. Sid Khullar (Chef at Large and Cal Wellness).

The participants had a detailed discussion on how the zero-waste approach may enhance creativity and foster a better use of ingredients. The conference was followed by a fun and informative zero-waste cooking demonstration by Chef Cristina Bowerman & Chef Ritu Dalmia at Diva restaurant. 

On the evening of November 22nd, Friday, the Embassy of Italy hosted a Gala Dinner whose menu was specially curated by Michelin star Chef Cristina Bowerman, together with Chef Ritu Dalmia. The bread for the dinner was provided by the Brown Bread Bakery, a project by the not-for-profit “Learn For Life Empowerment Project” that aides the underprivileged and promotes organic farming and local food production.  At the end of the event, Alma and IICA signed a friendship agreement for future cooperation.

Saturday, November 24th saw a thrilling cook off challenge between two teams of students lead by Chef Cristina Bowerman and Chef Anahita Dhondy. Post the competition, the delegation moved to the Bacchon Kaghar Shelter where children enjoyed a warm meal made of the extra food leftover from the Gala Dinner, which was prepared by ALMA and IICA students and distributed by Zomato Feeding India.

Culinary Professionals, in partnership with IFP, organized a successful Salon Culinaire in Qatar alongside a Worldchefs endorsed competition. The largest Salon Culinaire event to date in Qatar, the event was held in celebration of Hospitality Qatar, Qatar’s premier
International Hospitality and HORECA Trade Show, which returned this year for its 5th edition from 12th till 14th November at Doha Exhibition and
Convention Centre (DECC).

 

To further show its commitment to expanding the hospitality
industry in Qatar, IFP and QCP made this event bigger and better than ever before.
The three day event featured a large variety of activities, including a B2B Matchmaking area for exhibitors and visitors to meet, Product Launching allowing exhibitors to showcase their new and exciting products, and most
especially the Salon Culinaire, Hospitality Qatar’s signature
showcase wherein more than 400 Professional Chefs from 55 different local
companies compete in 34 multifarious categories including live cooking,
carving, showpiece, wedding cakes, pastries, and more.

 

All participating Chefs were happy to
experience this kind of culinary competition, boosting their knowledge and
skills. Their masterpieces/creations were judged by a Worldchefs jury from different
