Welcomegroup Graduate School of Hotel Administration Celebrates Worldchefs Accreditation

Paris, France · 19 November 2019 ·  Welcomegroup Graduate School of Hotel Administration Celebrates Worldchefs Accreditation

Article from Welcomgroup Graduate School of Hotel Administration

The Welcomgroup Graduate School of Hotel Administration
proudly celebrated their accreditation to the apex body for chefs in the world,
World Association of Chefs Societies, on the 8th of November 2019.
The World
Association of Chefs Societies, known as Worldchefs, is a non-political
professional organization, dedicated to maintaining and improving the culinary
standards of global cuisines. It accomplishes these goals through education,
training and professional development through their international membership. As an
authority and opinion leader on food, Worldchefs represents a global voice on
all issues related to the culinary profession. It was founded in1928 at the
Sorbonne in Paris with the venerable August Escoffier as the first Honorary
President. Worldchefs is a dynamic global network of more than 100 chefs’ associations representing
chefs at all levels and across all specialities worldwide.

Earlier this year the Welcomgroup Graduate
School of Hotel Administration, as a part of this accreditation process, was audited
and enrolled as a member of Indian federation of culinary associations (IFCA).

The Indian Federation of Culinary
Associations is a nodal body of culinary professionals in India and is an
independent, apolitical, non-religious and voluntary organization of culinary professionals
was formed with the
idea of developing the culinary profession and to showcase
Indian cuisine on the global platform. IFCA hopes to promote culinary knowledge
and propagate various kinds of food and bring obscure culinary styles and
practices to the forefront.

The celebration was graced by the top
leadership of Manipal Academy of Higher Education (MAHE), Manipal. The welcome
address was provided by Principal Chef K Thirugnanasambantham who welcomed the
gathering and said the process started nine months back: “There was an intense
audit process. We had lots of work to do. Team WGSHA stuck together and worked
hard. Finally, we achieved the IFCA accreditation last month. The Worldchefs accreditation then followed this. It is a testament to the high standards of
quality culinary education provided here at WGSHA. Besides national and
international rankings, Worldchefs accreditation is yet another feather added to
WGSHA’s crown. It gives us global visibility.”

The chief guest Dr H. Vinod Bhat,
Vice-Chancellor Manipal academy of higher education (MAHE) provided an
inspiring and thought-provoking message. He made the gathering aware of the
prestige attached to the accreditations they had received; how it opened the door
to many more opportunities and how the journey to greater heights was just
beginning. He ended his speech on a light-hearted note saying, “WGSHA unlike
others, is the only institution where any meeting begins and ends with a meal.”
The event was brought to a crescendo with a ceremonious cutting of the cake and
applause from the gathering of student chefs, distinguished guests and faculty
of Welcomgroup Graduate School of Hotel Administration.

SkyLine gained the SMART Label award 2019

Paris, France · 21 October 2019 ·  SkyLine gained the SMART Label award 2019

Host Milano 2019The SMART Label is promoted by HOST – Fiera Milano in collaboration with POLI.design and awards innovation in the hospitality industry. SMART Label award rewards products, services and projects that stand out for distinctive features in terms of functionality, technology, environmental sustainability, and ethical or social implications.

“Innovation is something that makes the life of a client easier, more productive and more profitable. It means putting people – those who will actually be using those solutions in the end – at the centre of the development of products and processes. To achieve this, we use hi-tech solutions and A.I. algorithms,” explains Alberto Pezzutto, head of the Cook and Chill Category at Electrolux Professional, describing how innovative SkyLine appliances are.

“Our ovens and blast chillers work in a similar way, providing an integrated system that is unique on the market. The two appliances can also communicate with one another, which cuts preparation times, offering the very highest level of food safety and reducing errors and consumption to a minimum,” continues Pezzutto. Then, he specifies “Restaurateurs appreciate their ease of use and multi-functionality (a blast chiller can also work as a leavening compartment, a thawing device and a yogurt maker), and the fact that several appliances can be combined, which further simplifies things because shared accessories are made available.”

Based on the combination of smart technology and human-centered design, SkyLine is born to set a new bar in the Cook&Chill, and in the overall professional kitchen business. SkyDuo allows the oven and the blast chiller to be synchronized and communicate with each other, making the work-life in the kitchen leaner, always getting top food quality with the highest productivity.

The SkyLine range, with the new combi ovens and blast chillers, will be the flagship for all the chef live demos on Electrolux Professional booth at Host Milano 2019, where you will be introduced to the new Electrolux Professional brand as the OnE trusted partner for Food, Beverage and Laundry solutions.

Did you know you can experience SkyLine appliances using an app? Discover how to exploit the Augmented Reality with your smartphone.

Vietnam
Report 18-21 Oct 2019

For the original version of this report and for photos of the event, download the pdf below.

Dear
Passionate Chefs,

World Chefs
Without Borders (WCWB) Chefs Social Responsibility for Vietnam program, WCWB
and Saigon Professional Chefs Guilds and 20 international chefs including WCWB
Committee members traveled at their own expense to Ho Chi Minh, Vietnam to work
on this meaningful CSR project from 18-21 October 2019. Chefs shared their “money,
knowledge and time” with 600 Vietnamese children and 280 kind, passionate diners
at the gala dinner.

World Chefs
Without Borders is proud to announce that our 3rd Chefs Social Responsibility
(CSR) for Vietnam event was held in Ho Chi Minh City from 18-20 October 2019 in
conjunction with International Chefs Day. This charity event was supported by
Saigon Professional Chefs Guilds. The event included a VIP Gala Fundraising
Dinner for 280 guests, and cooking 600 meals for 600 students.

We would
like to extend our sincere appreciation to New World Saigon Hotel for hosting
our entire event, especially Chef Alexander Chong, Executive Chef of New World
Saigon Hotel, who coordinated the entire CSR tour – a Malaysian chef but with a
kind heart and passion towards Vietnamese people, truly representing the spirit
of World Chefs Without Borders. Not forgetting all the lovely sponsors and
guests that purchased gala dinner tickets, as all fund raises make a difference
towards our CSR project.

The combined
efforts of WCWB, SPC and sponsors contributed to (refer to pictures)

1. 600
meals served to 600 children in conjunction with Worldchefs International Chefs
Day

2. Renovated library, books on shelves and upgraded school kitchen to meet the
demand of cooking more food

3.
Repainted and touched up the building

4. Purchased 5 desktop computers for the school library

5. Cooked gala dinner for our 280 guests

6. Funding 10 female students one-year program with the “Room to Read”
organization with the New World Saigon Hotel

In
conjunction with this WCWB & SPC’s CSR event, we also significantly promoted
(refer to pictures)

1.
Worldchefs International Chef Day

2. Celebrate Vietnamese Women Day (100 roses were presented to the women at the
gala by WCWB chefs)

3. Vietnamese
Young Chef Development Programme – prepared the main course of the gala dinner

4. Education on recycling by using biodegradable boxes and recycled buttons for
table showpieces at the gala dinner

WCWB has
always believed in sharing money if you can, sharing knowledge if not money, and
spending time doing charity if you do not have either of the two. We strongly
discourage you from criticizing those that perform their CSR. Instead, give
support and encouragement!

We, as chefs, may not be able to change lives but we can make a difference.

We are
chefs, we have no borders, and together let’s perform our Chefs Social
Responsibility.

We heartfully extend our thanks to the Vietnamese for allowing World Chefs Without Borders to
perform our Chefs Social Responsibility.

Willment
Leong

Chairman, World Chefs without Borders

Like a chef: “Cooking makes me feel good”

Moscow, Russia· 20 October 2019 · Like a chef: “Cooking makes me feel good”

Meet Vanja, who grew up in an orphanage in Russia. He found his calling during our culinary training program in Moscow and is ready to pursue a career as a professional chef.

The original link can be found below.

Vanja is one of 6,000 Russian teenagers that leave their orphanages every year and can struggle to transition to independent living, with only 10% able to provide for themselves or find a job.

He is also one of the first graduates of our global culinary training program Like a Chef that in Moscow is targeted towards young orphans.

The initiative builds on the program that started in Brazil in 2017 and is a collaboration between the Electrolux Food Foundation, Worldchefs and the local ‘Big Brothers, Big Sisters’ organization.

The eight-week course provides culinary training on sustainable cooking and valuable life skills, such as learning how to work in a team, start a business or pursue an education at a culinary college.

The second wave of graduates this year have been given the opportunity to become gastronomic stars of the future after being offered internships at restaurants owned by acclaimed Russian chef Vladimir Mukhin.

In 2019, the Electrolux Food Foundation is expanding the Like a Chef program with launches in Sweden, Poland, Egypt and Ukraine.

Worldchefs and Feed the Planet partners extend Like a Chef culinary training to four more countries

Paris, France · 17 October 2019 · Worldchefs and Feed the Planet partners extend Like a Chef culinary training to four more countries

Worldchefs, along with partners Electrolux Food Foundation and AIESEC, are gearing up to extend the ‘Like a Chef’ culinary training to four more countries. This program focuses on sustainable cooking and will equip unemployed people, such as orphans and women, with necessary culinary workplace skills. The trainings are expected to launch in Sweden, Poland, Ukraine, and Egypt in this coming October. To find out more about the ‘Like a Chef’ culinary training, please read Electrolux’s news article.

The original link can be found below.

On World Food Day, Electrolux is proud to announce that ‘Like a Chef’ – the program to equip unemployed people with culinary workplace skills with a focus on sustainable cooking – is launching in Sweden, Poland, Ukraine and Egypt in October, building on the success of the Electrolux Food Foundation initiative in Brazil and Russia.

The news follows the August announcement to annually fund the Electrolux Food Foundation until 2030 with an expected total of SEK 100 million to help grow their work. Electrolux aims to make sustainable eating the preferred choice by 2030 and the Electrolux Food Foundation works with partners and employee engagement to inspire and educate on sustainable eating and cooking, and to help people in need.

The Like a Chef culinary training program began in 2017 and has so far educated over 150 people in Curitiba, São Carlos and Moscow.

“We have seen from experience that this program can truly make a difference to those who are out of work – from orphaned teenagers to single mothers – giving them both confidence and skills to gain employment,” says Ingrid Yllmark, Head of the Electrolux Food Foundation.

“We plan for this program to grow globally,” adds Malin Ekefalk, Director Social Responsibility & Community Investment, Electrolux. “We are looking for additional Electrolux locations, where we can set up the program together with our partners Worldchefs and AIESEC.”

The eight-week course developed by Worldchefs is taught by volunteer professional chefs and incorporates a zero-waste approach to promote sustainable cooking and eating.

Like a Chef will roll out in:

Sweden – Ten women are taking part in the program at Yalla Rinkeby, a worker-owned social enterprise to help immigrant women in Stockholm. The training kitchen has been equipped with a donation of Electrolux Professional appliances and courses will run four times per year.

Ukraine – Fifteen young people living in orphanages in Kiev are participating in the first wave of the program, taking in place in a local culinary school, with the aim of assisting their transition to independent living and gaining workplace skills.

Poland – In collaboration with the country’s National Federation of Food Banks, the program takes place in the city of Olzstyn where the Food Bank HQ is located. Courses will be held in a newly inaugurated community center and around 50 unemployed people will be trained annually.

Egypt – Twenty unemployed women from Cairo will be trained in the first wave in a kitchen specially built in the Electrolux cooker factory, close to the Egyptian capital. Several local partnerships are also involved and the first group of students will graduate by the end of the year.

How Healthy Food Works: International Chefs Day

How Healthy Food Works

INTERNATIONAL CHEFS DAY – OCTOBER 20

Greetings Chefs and Colleagues!

As we continue to prepare for International Chefs Day on October 20, it is important to take a moment and think about how our profession can have an impact on children everywhere.  Teaching and sharing our skills are the most important things we can do to help children in our communities.  Cooking and establishing healthy eating habits can positively affect their entire lives. So how will you make a difference in a child’s life this International Chefs Day?

Let’s hear from two Chefs who have had an impact in their communities.

Thomas Gugler, Worldchefs President

“For me as the Worldchefs President, it is always very important to support children and promote healthy eating habits in my region and all around the world.

I personally involve myself in the education and alertness about healthy eating habits to make children aware why it is so important to have healthy and fresh food in their daily diet. Especially in Saudi Arabia where the wrong eating habits (including fast foods) have caused severe health problems for children, teenagers and even adults.

Children in Saudi Arabia have been very keen about International Chefs Day events. They always enjoy trying healthy dishes they cook and prepare together with members from the local chef’s society. It has also been a common practice for chefs to go to local schools in KSA to provide tutorial and practical lessons, resulting in a great and positive outcome for all.

I urge all chefs from around the world to be part of this fantastic initiative from Worldchefs and Nestle Professional. We must all ensure that our children and the children of our children find a healthy food environment and share their knowledge with generations to come.

After all, healthy food is the key for a long, happy and healthy life.”

Emmanuel Lorieux, Global Food Executive Chef, Nestlé Professional

“At Nestlé there are several events at the Alimentarium to educate children on how to choose the best fresh products and how to recognize the different kinds of fresh products. There is a real educational garden around the Alimentarium. They can also pick up the ingredients and cook them with the chefs and eat the meals that they prepared.

Chefs are now highly concerned about healthy eating and about teaching kids how to eat better, so as a chef and as a parent, I encourage all the chef communities to make that a mission to educate kids for better and sustainable eating as often as they have the opportunity.”
