Discover how Chefs Rodrigo Duarte Casar, Marlene Rojas Le-Fort and Carolina Perez have helped expand the Sustainability Education for Culinary Professionals course to Spanish-speaking chefs around the world. By translating the Sustainability Education for Culinary Professionals course into Spanish for Worldchefs Academy, they’ve made this free, online program accessible to even more culinary professionals dedicated to creating a better future through food.

With their combined passion for culinary education and sustainability, Rodrigo and Marlene are helping break language barriers and empower chefs to lead the change toward a more sustainable industry.

About the Speakers

Marlene Rojas Le-Fort

Gastronomy Engineer, Master’s in Local Development. Teacher of alternative pedagogies (Waldorf). Over 20 years of experience in education in Chile and Ecuador. Currently the Vice President of the Ecuadorian Academic Network for Gastronomic Tourism (RATGE) and a professor and researcher at Pontificia Universidad Católica del Ecuador. Her work focuses on developing projects that integrate gastronomy with the Sustainable Development Goals (SDGs), empowering women, and promoting responsible practices around food, sustainability, and educational innovation.

Rodrigo Duarte Casar

Bachelor of Education Sciences with a focus on Chemical and Biological Sciences, Bachelor of Gastronomy, Master’s in Food Science, Master’s in Applied Chemistry. Member of the WorldChefs Sustainability and Inclusion Committee. Over 30 years of experience in higher education and continuing education in Chile, the U.S., Ghana, and Ecuador. Professor and researcher at Pontificia Universidad Católica del Ecuador, focusing on functional foods and the codification of Ecuadorian cuisine.

Carolina Perez

Carolina Pérez, an Industrial Psychologist and Gastronomic Communicator, holds a Master’s degree in Food Culture and Communications from UNISG University of Slow Food – Italy. She is currently completing a Master’s degree in Innovation in Education. She is a university professor of Gastronomy at Universidad de las Americas in Quito, Ecuador, and works on projects, research, and academic publications. She is also responsible for the Sustainable and Healthy Gastronomy program of the School of Gastronomy. She has published three books regarding heritage, ancestral knowledge, sustainable gastronomy, and the chef’s profession. Her book “el Alimento, un ser Vivo” participated in the Exhibition of Sustainable Gastronomy Books at the Alfred Nobel Museum.

Shonah Chalmers
Feed the Planet Chairwoman and Culinary Professor at Humber College

Shonah Chalmers concentrates focuses much of her culinary skills on Sustainable food practices. As a red seal trade papered chef and CCC accreditation (Certified Chef de Cuisine) in Canada. Shonah utilizes her 30 years of cooking knowledge to help shape the next generation of chefs.

Her culinary career has taken her from fine dining restaurants, catering, golf courses and hotels in Toronto to a ski resort in Gunma-ken Japan to a Chefs Tour Against Hunger in South Africa 2011. Shonah’s passion for sharing her culinary experiences led her to becoming an educator at Humber College 12 years ago and remains relevant in
the world of food as the Toronto branch Canadian Culinary Federation President for the last 10 years.

Also, Chef Chalmers is accredited as a Worldchefs Certified
Continental Judge for both Vegan/Plant Based and Culinary Hot Kitchen and currently holds the role of Vice Chair for the Worldchefs Feed the planet and Sustainability committee, where she develops sustainable education models for food service professionals globally Chef Chalmers assists with many local, National and
International culinary initiatives; facilitating industry networking events, donating time to food banks, demonstrations on food repurposing & foraging. Much of Shonah’s energies continue to be focused on the sharing, mentoring & moving forward of the culinary industry for all cooks and chefs in a positive and inclusive way.
