“Vanilla, it has traditionally played in that kind of dessert pastry area, but we’re actually seeing vanilla starting to be incorporated more into savory in many ways. And it really comes down to the fact that vanilla is so versatile as a supporting cast member that it doesn’t have to be the hero of the show. Many times it’s not. It’s actually just helps to augment other flavors that are in a particular dish.”

The Sustainable Vanilla Initiative (SVI) and Global Impact

Nielsen-Massey’s commitment to vanilla extends far beyond the product; as a founding member of the Sustainable Vanilla Initiative (SVI), the company is at the forefront of protecting a highly fragile global supply chain. Jonathan Thompson discusses how the SVI operates as a “pre-competitive” group, bringing together competitors and stakeholders to address critical issues like deforestation, infrastructure, and clean water access in Madagascar. By advocating for crop diversification and living wages, the initiative aims to build long-term resilience for farmers who navigate a labor-intensive crop where each orchid must be hand-pollinated during its single day of flowering. This focus on sustainability ensures that vanilla, the world’s most consistent favorite flavor, will remain a viable and ethical ingredient for future generations of culinary professionals.

Other Resources

As Jonathan mentions in this episode, Nielsen-Massey prides itself on its focus towards quality and people. Those values were on display at Worldchefs Congress 2026 in Wales, where the company brought Pastry Chef Eric Lanlard to the stage, speaking about his life in “A Pastry Journey Built on Discipline, Passion & People.” Watch the session here.
