“Vanilla, it has traditionally played in that kind of dessert pastry area, but we’re actually seeing vanilla starting to be incorporated more into savory in many ways. And it really comes down to the fact that vanilla is so versatile as a supporting cast member that it doesn’t have to be the hero of the show. Many times it’s not. It’s actually just helps to augment other flavors that are in a particular dish.”
