Fungi Universe: Sustainable Culinary Explorations

Discover the captivating world of fungi with Bruno Rouffaer in our upcoming episode of Sustainability Around the World. From a humble beginning with a book on mushrooms gifted by his father, Bruno’s journey has evolved into a passionate exploration of mycology. As an amateur mycologist, he has delved deep into both ancient texts and modern technology, amassing a wealth of knowledge that he shares with over 6,000 like-minded individuals through his scientific-based group ‘Fungi of the Planet’. Join us as Bruno shares his insights into the sustainability and culinary potential of fungi, promising an enlightening and inspiring discussion for all who attend.

Join Chef Chris Koetke and Bruno Rouffaer as they:

  • Explain the role of fungi in ecosystem health, such as decomposition and nutrient cycling.
  • Showcase the nutritional benefits of different types of edible fungi, including their protein content, vitamins, and minerals.
  • Discuss the wide range of flavors and textures that fungi offer, from delicate chanterelles to meaty portobello.
