Sustainable Gastronomy Day
The Sustainable Gastronomy Day is observed on June 18th across the world. It aims to draw the world’s attention towards sustainable gastronomy’s role in catalysing the SDGs.
HRC Culinary Academy Bulgaria, in partnership with JRE-Jeunes Restaurateurs d’Europe, is organizing a special event to give more attention to this important day.
The event will take place in Sofia, Bulgaria. During the event, International JRE Chefs will provide HRC students with a masterclass on sustainable cooking, followed by a lecture on Sustainable cocoa processing and manufacturing, and many more.
In the evening, a sustainable gastronomic dinner will be served at the Academy’s teaching restaurant Talents. The menu will consist of 4 courses for which each Chef is invited to prepare 1 dish. The signature dish will reflect the essence of the program, plus the cooking style and regionality of the Chef.
