Competition Seminar instructors share techniques from both the perspective of Worldchefs Certified Judges and award-winning competitors. Participants gain an understanding of not only judging criteria but also best practices in the competition kitchen and tactics that consistently reach the highest place at the podium.
Current judges: All Worldchefs Certified Judges are required to attend a Competition Seminar every five years.
Future judges: Attending a Competition Seminar is a mandatory part of the process to become a Worldchefs Certified Judge. Participants are awarded a certificate of participation that can be submitted as one of the required credentials in an application. Attending a Competition Seminar is one of the required credentials in a Certified Judge application. Keep in mind, all Certified Judges are required to attend a Competition Seminar every five years. These intensive workshops provide key information about current trends, competition rules and judging criteria, to help chefs keep up-to-date and at their best!
Attending applicable Competition Seminars is one part of the process to become a judge, and does not automatically qualify you as a Certified Judge. Applicants must fulfil additional criteria and provide evidence of support in a formal application process. Meet Your Seminar Instructor:
This seminar is taught by Kenny Kong
With more than forty years of experience, Chef Kenny has worked as a pastry chef in Hong Kong, Saudi Arabia, and most recently, Singapore, where he is currently Executive Pastry Chef, Honorary President of the Singapore Pastry Alliance, Member of the Singapore Chefs Association, Instructor Judge of the Worldchefs Pastry Art Competition, Certified International Judge of the Worldchefs and Member of the World Committee of Honour for the Gelato World Cup.
Adhering to the 6T of perfection (Temperature, Texture, Taste, Technique, Technology, and Time) philosophy, he firmly feels that there are no strict norms or rules when it comes to baking pastries. To grasp the established basics of basic cooking procedures and skills, beauty, and taste, there are no short cuts.
In addition, Chef Kenny has received numerous accolades on a global scale. In 2002 and 2017, the World Gourmet Summit Awards of Excellence named him the Best Pastry Chef of the Year. In 2008, 2009, and 2010, the Hospitality Asia Platinum Award named him the Best Pastry Chef for Excellence. And the Most Stylistic Pastry Chef.
Over thirty years ago, Chef Kenny began his journey as the pastry chef for the Singapore National Team, which took home gold in the IKA Olympic Frankfurt World Competition in 1992. In 1996, Kenny took on the role of coach and trainer for the Singapore Pastry National Team, a role he still retains, as a continuation of his development of the sector in Singapore.
In order to establish a forum for communication and learning among gelato, dessert, pastry art, and friendship of pastry chefs in the region, Singapore Pastry alliance and Chef Kenny’s involvement brought in the first Asian pastry Cup with seven nations in 2006, the first Asian Gelato Cup with eleven countries in 2018 Singapore and the first Asian Pastry young Chefs challenge in 2023 China. In addition to helping to spread awareness of Asian pastry and culinary traditions around the world, Kenny finds it incredibly fulfilling to mentor, motivate, and instruct the next generation of pastry chefs.
